Quick Chicken Parmesan

Ingredients
- Servings: 2
- 2 boneless skinless chicken breast halves
- egg substitute (equal to one egg in volume)
- 1 cup seasoned bread crumbs
- 2 tablespoons butter or 2 tablespoons margarine
- 2 cups bottled spaghetti sauce
- 1/2 cup shredded fat free mozzarella cheese
- 1 tablespoon grated parmesan cheese
- 1/4 cup chopped parsley
Recipe
- 1 with whatever tool comes easily to hand, flatten the chicken breasts a bit.
- 2 dip the chicken in the egg then in the crumbs.
- 3 melt the margarine in a skillet and brown the chicken.
- 4 add the sauce, reduce heat, cover and simmer 15 minutes.
- 5 sprinkle with the cheeses and parsely.
- 6 cover and simmer another 5 or so minutes until cheese melts.
