California Quinoa Club Sandwich

Ingredients

- 1/2 cup cooked quinoa, cooled
- 1/3 cup hummus
- 1 small avocado, sliced
- 2 teaspoons fresh lemon juice
- salt and pepper
- 3 slices sandwich bread
- 1 roma tomato, sliced
- 1 cup quinoa mixed sprouts
Recipe
- 1 in small bowl, combine quinoa and hummus.
- 2 sprinkle avocado with lemon juice. season to taste with salt and pepper.
- 3 spread one side of each bread slice with quinoa mixture. top one slice with half of the avocado, tomato and sprouts. cover with another slice of bread. repeat. cut sandwich in half.
