Raisin Bran Muffins (low Fat)

Total Time: 30 mins Preparation Time: 15 mins Cook Time: 15 mins

Ingredients

  • 1 tablespoon oil
  • 2 tablespoons applesauce
  • 1/2 cup brown sugar
  • 1/4 cup molasses
  • 2 egg whites
  • 1 cup skim milk
  • 1 cup flour
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup raisins
  • 1 1/2 cups natural bran

Recipe

  • 1 beat egg whites until firm peaks form and set aside.
  • 2 combine oil, applesauce, brown sugar and molasses and beat until smooth.
  • 3 sift together flour, salt, baking soda and baking powder and add alternately with milk to molasses mixture.
  • 4 add bran and raisins and stir until moistened.
  • 5 fold in beaten egg whites.
  • 6 spoon into muffin pan sprayed with nonstick spray.
  • 7 bake at 400 f for 15-20 minutes.
