Raisin Bran Muffins (low Fat)

Ingredients
- 1 tablespoon oil
- 2 tablespoons applesauce
- 1/2 cup brown sugar
- 1/4 cup molasses
- 2 egg whites
- 1 cup skim milk
- 1 cup flour
- 1 1/2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 cup raisins
- 1 1/2 cups natural bran
Recipe
- 1 beat egg whites until firm peaks form and set aside.
- 2 combine oil, applesauce, brown sugar and molasses and beat until smooth.
- 3 sift together flour, salt, baking soda and baking powder and add alternately with milk to molasses mixture.
- 4 add bran and raisins and stir until moistened.
- 5 fold in beaten egg whites.
- 6 spoon into muffin pan sprayed with nonstick spray.
- 7 bake at 400 f for 15-20 minutes.
