Quick Gnocchi

Ingredients

- 1 cup betty crocker potato buds, dry
- 1 cup boiling water
- 1 egg, beaten
- 1/2 teaspoon salt
- 1/8 teaspoon ground black pepper
- 1 1/2 cups all-purpose flour
Recipe
- 1 place potatoes in a medium bowl.
- 2 pour in boiling water.
- 3 stir until well blended and let cool.
- 4 stir in egg, salt and pepper.
- 5 blend in flourto make a fairly stiff dough.
- 6 turn dough onto a well floured surface.
- 7 knead lightly.
- 8 divide dough into 1/2.
- 9 shape each 1/2 into a long thin roll about the size of a breadstick.
- 10 dip knife into flour and cut into bite sized pieces.
- 11 bring salted water to boil in a large pot.
- 12 add a few gnocchi to boiling water.
- 13 as gnocchi rises to surface remove with a slotted spoon.
- 14 repeat until all cooked.
