Quick Gnocchi

Total Time: 15 mins Preparation Time: 10 mins Cook Time: 5 mins

Ingredients

  • Servings: 2
  • 1 cup betty crocker potato buds, dry
  • 1 cup boiling water
  • 1 egg, beaten
  • 1/2 teaspoon salt
  • 1/8 teaspoon ground black pepper
  • 1 1/2 cups all-purpose flour

Recipe

  • 1 place potatoes in a medium bowl.
  • 2 pour in boiling water.
  • 3 stir until well blended and let cool.
  • 4 stir in egg, salt and pepper.
  • 5 blend in flourto make a fairly stiff dough.
  • 6 turn dough onto a well floured surface.
  • 7 knead lightly.
  • 8 divide dough into 1/2.
  • 9 shape each 1/2 into a long thin roll about the size of a breadstick.
  • 10 dip knife into flour and cut into bite sized pieces.
  • 11 bring salted water to boil in a large pot.
  • 12 add a few gnocchi to boiling water.
  • 13 as gnocchi rises to surface remove with a slotted spoon.
  • 14 repeat until all cooked.
