Provencal Roast Tomatoes

Ingredients

- 2 ounces fresh breadcrumbs
- 2 tablespoons flat leaf parsley, chopped
- 2 tablespoons fresh basil, chopped
- 1 tablespoon fresh oregano, chopped
- salt
- pepper
- 4 large tomatoes, vine ripened
- 6 garlic cloves, finely chopped
- 2 tablespoons olive oil
Recipe
- 1 preheat oven to 350 degrees.
- 2 combine breadcrumbs and herbs in a bowl and season with salt and pepper.
- 3 halve each tomato horizontally and scoop out the core and seeds with a teaspoon, being careful not to break through the skin.
- 4 sprinkle garlic into each tomato, then top with the breadcrumb mixture and place in a shallow baking dish.
- 5 drizzle with the olive oil and bake for 40 minutes, or until soft.
