Provencal Roast Tomatoes

Ingredients

  • Servings: 4
  • 2 ounces fresh breadcrumbs
  • 2 tablespoons flat leaf parsley, chopped
  • 2 tablespoons fresh basil, chopped
  • 1 tablespoon fresh oregano, chopped
  • salt
  • pepper
  • 4 large tomatoes, vine ripened
  • 6 garlic cloves, finely chopped
  • 2 tablespoons olive oil

Recipe

  • 1 preheat oven to 350 degrees.
  • 2 combine breadcrumbs and herbs in a bowl and season with salt and pepper.
  • 3 halve each tomato horizontally and scoop out the core and seeds with a teaspoon, being careful not to break through the skin.
  • 4 sprinkle garlic into each tomato, then top with the breadcrumb mixture and place in a shallow baking dish.
  • 5 drizzle with the olive oil and bake for 40 minutes, or until soft.
