Pain De Volaille Meatloaf

Ingredients
- Servings: 6
- 2 lbs ground turkey
- 1/2 cup breadcrumbs
- 1 egg
- 1/8 cup adobo seasoning
- 1/4 cup fresh cilantro
- 1/4 cup onion, finely chopped
- 1/4 cup green pepper, finely chopped
- 1 tablespoon black pepper
- 1/2 tablespoon cumin
- 2 tablespoons lime juice
- 1/2 tablespoon sage
- 1 teaspoon turmeric
- 1/4 cup onion, finely chopped
- 1/2 cup dry wine
- 2 tablespoons heavy cream
- 8 tablespoons butter
- 2 teaspoons lemon juice
- 1 pinch salt
- 1 pinch pepper
Recipe
- 1 preheat oven to 350°f.
- 2 combine all ingredients for the loaf in a large bowl. knead using hands.
- 3 place meatloaf mixture in bread pan and bake in oven for 1 hour or until done.
- 4 in a saucepan combine onions and wine. bring to a boil and reduce by half.
- 5 add tumeric and cream. reduce to medium heat.
- 6 wisk in the the butter a little at a time; adding the next piece before the prior has completely melted. do not allow mixture to boil. stir constantly.
- 7 add fresh lemon juice and salt and pepper to taste.
- 8 pour sauce over meatloaf and serve.
