Orange Marmalade Gingerbread

Ingredients

  • 1/4 cup shortening
  • 1 egg, well beaten
  • 1/2 cup molasses
  • 1 cup orange marmalade
  • 1 3/4 cups sifted cake flour
  • 3/4 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1 teaspoon ginger
  • 1/2 teaspoon salt
  • 4 tablespoons boiling water
  • 3 cups sifted confectioners' sugar
  • 1 egg , unbeaten
  • 1 teaspoon lemon extract
  • 1/3 cup butter
  • 1 tablespoon molasses
  • 2 tablespoons milk

Recipe

  • 1 in one large bowl, place melted shortening, beaten egg, molasses and marmalade. in another bowl, place sifted dry ingredients. pour wet ingredients in to dry and beat well. add boiling water and mix thoroughly. bake in 8-inch square pan at 350f for 25-30 minutes.
  • 2 add molasses butter frosting.

  • 4 add 1 cup confectioners sugar, egg and lemon flavoring to creamed butter . mix well. add remaining confectioners sugar alternately with molasses and milk. beat well.
