Fried Hot Water Cornbread

Ingredients
- 1 cup self-rising cornmeal
- 1/3 cup self-rising flour
- 1 cup boiling water
- oil (for frying)
Recipe
- 1 mix cornmeal and flour in mixing bowl.
- 2 pour in boiling water (may need to add a little more to make mixture stick together.
- 3 stir well.
- 4 let cool for a few minutes.
- 5 preheat iron skillet or griddle and add enough oil to cover bottom of skillet.
- 6 spoon about 1/4 cup into hot skillet.
- 7 brown on both sides.
- 8 drain on paper towel and serve while still hot.
