Red, Yellow And Black Chili

Total Time: 35 mins Preparation Time: 15 mins Cook Time: 20 mins

Ingredients

  • Servings: 4
  • 2 garlic cloves
  • 1/4 teaspoon ground red pepper (hot)
  • 2 tablespoons oil
  • 1 (28 ounce) can vegetarian baked beans
  • 1 (14 ounce) can black beans, drained
  • 1 (14 ounce) can diced tomatoes
  • 1 medium yellow bell pepper
  • 1 tablespoon cumin powder (not cumin seeds!)
  • 2 teaspoons morton lite salt
  • 1/2 ounce taco seasoning
  • 1 medium green chili pepper (adjust to taste)
  • 1/2 lb ground beef, browned, optional or 1 cup textured soy protein granules

Recipe

  • 1 in large pot, on medium heat, add oil.
  • 2 crush garlic cloves and add to oil, add chli powder and let sizzle few seconds.
  • 3 chop yellow pepper roughly and add to oil.
  • 4 add tomatoes, and cumin, cook few minutes.
  • 5 add baked beans, and black beans, salt, taco seasoning, and beef or soy granules if using.
  • 6 slit green chili pepper and add (if you want it less spicy, de-seed the pepper first).
  • 7 let simmer 15-30 minutes,to desired consistancy.
  • 8 enjoy alone or with torn pieces of good thick bread.
