Pumpkin Bread With Cranberries

Total Time: 1 hr 10 mins Preparation Time: 10 mins Cook Time: 1 hr

Ingredients

  • 3 1/2 cups all-purpose flour
  • 2 teaspoons baking soda
  • 1 1/2 teaspoons salt
  • 2 teaspoons cinnamon
  • 2 teaspoons nutmeg
  • 3 cups sugar
  • 4 eggs, beaten
  • 2 cups pumpkin puree
  • 1 tablespoon lemon zest
  • 1 tablespoon orange juice
  • 1/2 cup water
  • 1/2 cup dried cranberries
  • 1 cup vegetable oil

Recipe

  • 1 preheat oven to 350.
  • 2 lightly butter two 9"x5" loaf pans.
  • 3 in a large mixing bowl, combine flour, soda, salt, cinnamon, nutmeg and sugar.
  • 4 add eggs, water, oil, lemon zest, orange juice and pumpkin.
  • 5 stir until blended.
  • 6 add cranberries.
  • 7 mix well.
  • 8 pour into loaf pans.
  • 9 bake 1 hour.
  • 10 cool for about 10 minutes.
  • 11 remove from pans and let cool on a rack.
