Pumpkin Bread With Cranberries

Ingredients
- 3 1/2 cups all-purpose flour
- 2 teaspoons baking soda
- 1 1/2 teaspoons salt
- 2 teaspoons cinnamon
- 2 teaspoons nutmeg
- 3 cups sugar
- 4 eggs, beaten
- 2 cups pumpkin puree
- 1 tablespoon lemon zest
- 1 tablespoon orange juice
- 1/2 cup water
- 1/2 cup dried cranberries
- 1 cup vegetable oil
Recipe
- 1 preheat oven to 350.
- 2 lightly butter two 9"x5" loaf pans.
- 3 in a large mixing bowl, combine flour, soda, salt, cinnamon, nutmeg and sugar.
- 4 add eggs, water, oil, lemon zest, orange juice and pumpkin.
- 5 stir until blended.
- 6 add cranberries.
- 7 mix well.
- 8 pour into loaf pans.
- 9 bake 1 hour.
- 10 cool for about 10 minutes.
- 11 remove from pans and let cool on a rack.
