Pumpkin Bread-a Little Lighter

Total Time: 1 hr 40 mins Preparation Time: 30 mins Cook Time: 1 hr 10 mins

Ingredients

  • 3 cups sugar
  • 1/2 cup vegetable oil
  • 1/2 cup applesauce
  • 4 eggs
  • 16 ounces fresh pumpkin (can used canned)
  • 2 cups flour
  • 1 1/2 cups whole wheat flour
  • 2 teaspoons baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 1 teaspoon cinnamon
  • 1 teaspoon nutmeg
  • 1/2 teaspoon clove
  • 1/2 teaspoon allspice
  • 1/2 teaspoon ginger
  • 1/2 cup water

Recipe

  • 1 preheat oven to 350 degrees.
  • 2 in a large bowl combine sugar, oil, applesauce, and eggs.
  • 3 add pumpkin and mix well.
  • 4 combine dry ingredients, then add to the pumpkin mix alternating with the 1/2 cup of water.
  • 5 pour into greased loaf pans.
  • 6 bake at 350 for 60-70 minutes if using two loaf pans. if using mini loaf pans bake for 25-30 minutes. bake until bread tests done. cool in pans for 10 minutes before removing bread and placing on wire racks.
