Pumpkin Bread-a Little Lighter

Ingredients
- 3 cups sugar
- 1/2 cup vegetable oil
- 1/2 cup applesauce
- 4 eggs
- 16 ounces fresh pumpkin (can used canned)
- 2 cups flour
- 1 1/2 cups whole wheat flour
- 2 teaspoons baking soda
- 1 teaspoon baking powder
- 1 teaspoon salt
- 1 teaspoon cinnamon
- 1 teaspoon nutmeg
- 1/2 teaspoon clove
- 1/2 teaspoon allspice
- 1/2 teaspoon ginger
- 1/2 cup water
Recipe
- 1 preheat oven to 350 degrees.
- 2 in a large bowl combine sugar, oil, applesauce, and eggs.
- 3 add pumpkin and mix well.
- 4 combine dry ingredients, then add to the pumpkin mix alternating with the 1/2 cup of water.
- 5 pour into greased loaf pans.
- 6 bake at 350 for 60-70 minutes if using two loaf pans. if using mini loaf pans bake for 25-30 minutes. bake until bread tests done. cool in pans for 10 minutes before removing bread and placing on wire racks.
