Gingerbread Muffins

Total Time: 25 mins Preparation Time: 5 mins Cook Time: 20 mins

Ingredients

  • 1/4 cup packed brown sugar
  • 1/2 cup molasses
  • 1/3 cup vegetable oil
  • 1 egg
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon ground ginger
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground allspice
  • 1/2 cup milk

Recipe

  • 1 heat oven to 400 f.
  • 2 grease bottoms only of 12 medium muffin cups, 2 1/2 × 1 1/4 inches, or place paper baking cup in each muffin cup.
  • 3 beat brown sugar, molasses, milk, oil and egg in large bowl, using spoon.
  • 4 stir in remaining ingredients just until flour is moistened.
  • 5 divide batter evenly among muffin cups.
  • 6 bake 18 to 20 minutes or until toothpick inserted in center comes out clean.
  • 7 immediately remove from pan to wire rack.
  • 8 serve warm if desired.
