Fruit Quick Bread

Total Time: 55 mins Preparation Time: 15 mins Cook Time: 40 mins

Ingredients

  • 1 cup butter
  • 1 1/2 cups sugar
  • 1 teaspoon vanilla
  • 1 teaspoon salt
  • 1 teaspoon lemon juice
  • 1/2 teaspoon baking soda
  • 1/2 cup sour cream
  • 3 cups flour
  • 4 eggs
  • 1 cup strawberry preserves
  • 1/2 teaspoon red food coloring (optional)
  • 1/2 cup chopped nuts (i like pecans)

Recipe

  • 1 preheat oven to 350*.
  • 2 blend butter, sugar, vanilla, salt and lemon juice. beat in eggs one at a time.
  • 3 dissolve baking soda in sour cream, and add to butter mixture.
  • 4 fold in flour, preserves, nuts and food coloring.
  • 5 pour batter into two greased and floured loaf pans.
  • 6 bake 35-40 minutes.
  • 7 (the photo i posted to this recipe in oct. '05 was made with peach preserves. ;) ).
