Eggless, Dairy-free Cornbread

Ingredients

  • Servings: 9
  • 1 1/4 cups soymilk
  • 1 tablespoon vinegar
  • 1 teaspoon vinegar
  • 1 cup cornmeal
  • 1 cup natural unbleached flour
  • 2 tablespoons sugar
  • 1/2 teaspoon salt
  • 1 tablespoon baking powder
  • 3/4 teaspoon baking soda

Recipe

  • 1 preheat oven to 375.
  • 2 pour the soymilk mixture into the dry ingredients. mix quickly, and don't overmix.
  • 3 pour into the prepared pan. bake for 25-30 minutes.
  • 4 done when toothpick is inserted in center comes out clean. cool, then cut.
