Egg, Bacon, Spinach, And Sharp Cheddar Panini

Ingredients

  • Servings: 2
  • 2 ciabatta rolls
  • 6 slices bacon
  • 2 eggs, beaten
  • baby spinach leaves (1 large handful)
  • 3 ounces sharp cheddar cheese, thinly sliced
  • sea salt
  • fresh ground black pepper
  • vegetable oil, for sauteing and brushing

Recipe

  • 1 preheat a panini grill.
  • 2 trim the top and bottom off the ciabatta rolls so that they are about 1 inch thick.
  • 3 slice open lengthwise.
  • 4 in a skillet, sauté the bacon until crisp.
  • 5 remove the bacon from the skillet and discard most of the oil.
  • 6 pour in the beaten egg, season well with salt and pepper, and let the eggs set like an omelet.
  • 7 divide the spinach between the two roll bottoms.
  • 8 top with the crispy bacon, then half of the omelet, and finish with the cheese; cover with roll top.
  • 9 brush both sides of the panini with a little oil and grill in the preheated panini grill for 2-3 minutes, or according to the manufacturer’s instructions.
  • 10 the bread should be golden brown and the filling warmed through.
