Egg, Bacon, Spinach, And Sharp Cheddar Panini

Ingredients

- 2 ciabatta rolls
- 6 slices bacon
- 2 eggs, beaten
- baby spinach leaves (1 large handful)
- 3 ounces sharp cheddar cheese, thinly sliced
- sea salt
- fresh ground black pepper
- vegetable oil, for sauteing and brushing
Recipe
- 1 preheat a panini grill.
- 2 trim the top and bottom off the ciabatta rolls so that they are about 1 inch thick.
- 3 slice open lengthwise.
- 4 in a skillet, sauté the bacon until crisp.
- 5 remove the bacon from the skillet and discard most of the oil.
- 6 pour in the beaten egg, season well with salt and pepper, and let the eggs set like an omelet.
- 7 divide the spinach between the two roll bottoms.
- 8 top with the crispy bacon, then half of the omelet, and finish with the cheese; cover with roll top.
- 9 brush both sides of the panini with a little oil and grill in the preheated panini grill for 2-3 minutes, or according to the manufacturer’s instructions.
