Hot Water Cornbread

Ingredients
- 2 cups cornmeal
- 3/4 cup all-purpose flour
- 2 teaspoons salt
- 1 tablespoon sugar
- 1 egg, beaten
- boiling water
- oil (for frying, 1/4 to 1/2 cup)
Recipe
- 1 mix together the cornmeal, flour, salt and sugar.
- 2 stir in the egg.
- 3 slowly add enough boiling water until you have a thick batter that you can form into patties.
- 4 form into patties and fry in hot oil in a heavy skillet until golden brown on both sides.
- 5 serve immediately.
