Grilled Pitas With Caramelized Onions And Goat Cheese

Total Time: 45 mins Preparation Time: 5 mins Cook Time: 40 mins

Ingredients

  • Servings: 4
  • 4 tablespoons olive oil
  • 2 lbs vidalia onions, coarsely chopped (about 3 large)
  • 1 teaspoon sugar
  • 1/4 teaspoon salt
  • 1/4 teaspoon dried tarragon
  • 1/4 teaspoon dried thyme
  • 4 (6 inch) pita bread, cut horizontally in half
  • 6 -7 ounces soft fresh goat cheese, crumbled
  • 1 tablespoon chopped fresh parsley

Recipe

  • 1 in a large nonstick skillet, warm 2 tablespoons of the olive oil over medium heat.
  • 2 add onions, sugar, salt, and cook stirring frequently, until onions are very soft, about 15 minutes.
