Gingerbread Muffins

Ingredients

- 1 3/4 cups flour
- 2 teaspoons baking powder
- 1 teaspoon cinnamon
- 3/4 teaspoon ginger
- 1/4 teaspoon baking soda
- 1 egg, beaten
- 2/3 cup milk
- 1/4 cup brown sugar
- 1/4 cup cooking oil
- 1/4 cup molasses
Recipe
- 1 grease twelve muffin cups or line with paper cups.
- 2 stir together the flour, baking powder, cinnamon, ginger and baking soda in medium size mixing bowl.
- 3 make a well in the center.
- 4 in another bowl combine together the egg, milk, brown sugar, oil and molasses.
- 5 add all at once to the dry mixture.
- 6 stir just until moistened.
- 7 the batter should be lumpy.
- 8 spoon the batter into the prepared muffin cups, filling each 2/3 full.
- 9 bake in a 400°f for about 20 minutes or until golden.
- 10 cool in muffin cups on a wire rack for 5 minutes.
- 11 remove from muffin cups and let them cool.
