Cranberry Cornbread

Total Time: 1 hr Preparation Time: 15 mins Cook Time: 45 mins

Ingredients

  • Servings: 9
  • 1/2 cup butter, softened
  • 1 cup sugar
  • 2 eggs
  • 1 1/2 cups all-purpose flour
  • 1 cup cornmeal
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 1/2 cups buttermilk
  • 1 cup cranberries, halved

Recipe

  • 1 in a mixing bowl, cream butter and sugar.
  • 2 add eggs; mix well.
  • 3 combine the flour, cornmeal, baking powder and salt.
  • 4 add to creamed mixture alternately with buttermilk.
  • 5 fold in cranberries.
  • 6 transfer to a greased 9-in. square baking pan.
  • 7 bake at 375 degrees f for 40-45 minutes or until a toothpick inserted near the center comes out clean.
  • 8 serve warm.
