Cranberry Cornbread

Ingredients

- 1/2 cup butter, softened
- 1 cup sugar
- 2 eggs
- 1 1/2 cups all-purpose flour
- 1 cup cornmeal
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1 1/2 cups buttermilk
- 1 cup cranberries, halved
Recipe
- 1 in a mixing bowl, cream butter and sugar.
- 2 add eggs; mix well.
- 3 combine the flour, cornmeal, baking powder and salt.
- 4 add to creamed mixture alternately with buttermilk.
- 5 fold in cranberries.
- 6 transfer to a greased 9-in. square baking pan.
- 7 bake at 375 degrees f for 40-45 minutes or until a toothpick inserted near the center comes out clean.
- 8 serve warm.
