Pumpernickel-sausage Casserole

Ingredients

- 6 large eggs
- 2 cups cubed pumpernickel bread
- 2 cups shredded cheese, divided
- 4 ounces smoked sausage
- 1 cup chopped bell pepper
- 3 -5 chopped green onions
Recipe
- 1 preheat oven to 375 degrees coat a 9 inch pie plate with cooking spray. lightly beat eggs in a large bowl. add bread cubes,11/2 cups cheese, smoked sausage, bell pepper and green onions stir until well combined.
- 2 transfer mixture into pie plate.
- 3 sprinkle remaining cheese on top of mixture. bake until top is golden and a knife inserted in center comes out clean, 55-60 minutes.
