Gingered Rhubarb Bread

Ingredients
- 2 cups stewed rhubarb
- 2 tablespoons butter
- 2 tablespoons sugar
- 2 eggs
- 2/3 teaspoon salt
- 1 1/2 teaspoons ginger
- 1 1/2 cups whole wheat flour
- 2 1/2 cups bread flour
- 2 1/2 teaspoons yeast
- 2 lbs rhubarb, trimmed and cubed
- 1 cup sugar (or more to taste)
- 1/2 cup orange juice
Recipe
- 1 stewed rhubarb: combine sugar, orange juice and rhubarb in a saucepan over low heat. simmer until rhubarb falls apart and sauce is thick like a puree. (also try over ice cream!).
- 2 bake bread according to manufacturer's instructions.
