Ingredients

- 1 1/2 cups flour
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 2 tablespoons sugar
- 3 tablespoons soft shortening or 3 tablespoons liquid oil
- 1 cup cold cooked rice
- 1 egg, beaten
- 1 1/4 cups milk
- 1/2 cup cubed cheddar cheese
Recipe
- 1 sift dry ingredients togther. cut in shortening or stir in oil. add rice, egg, cheese and milk; mix enough to moisten dry ingredients.
- 2 grease muffin tins. fill muffin tins 3/4 full. bake 425 degrees for 25 minutes.
