Rice Muffins

Total Time: 35 mins Preparation Time: 10 mins Cook Time: 25 mins

Ingredients

  • Servings: 12
  • 1 1/2 cups flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 2 tablespoons sugar
  • 3 tablespoons soft shortening or 3 tablespoons liquid oil
  • 1 cup cold cooked rice
  • 1 egg, beaten
  • 1 1/4 cups milk
  • 1/2 cup cubed cheddar cheese

Recipe

  • 1 sift dry ingredients togther. cut in shortening or stir in oil. add rice, egg, cheese and milk; mix enough to moisten dry ingredients.
  • 2 grease muffin tins. fill muffin tins 3/4 full. bake 425 degrees for 25 minutes.
