Quinoa Veggie Burgers

Total Time: 30 mins Preparation Time: 15 mins Cook Time: 15 mins

Ingredients

  • Servings: 4
  • 1/2 cup quinoa, uncooked
  • 1 carrot, diced
  • 4 scallions, sliced
  • 2 garlic cloves
  • 15 ounces black beans, drained and rinsed
  • 1/4 cup dried breadcrumbs, italian seasoned
  • 1 large egg, lightly beaten
  • 1 tablespoon ground cumin

Recipe

  • 1 in a small pot, bring 3/4 cup water to a boil.
  • 2 add quinoa, cover, and reduce heat to low.
  • 3 cook until liquid is absorbed, 12 to 14 minutes; set aside.
  • 4 in a food processor, pulse carrot until finely chopped.
  • 5 add cooked quinoa, scallions, garlic, black beans, breadcrumbs, egg, cumin, salt; pulse until combined but still slightly chunky.
  • 6 form mixture into four patties.
  • 7 in a large nonstick skillet, heat oil over medium; cook burgers about 8 minutes per side.
