Roast Goose With Apple Stuffing (gansabraten Mit Apfelfullung)

Total Time: 1 hr 50 mins Preparation Time: 20 mins Cook Time: 1 hr 30 mins

Ingredients

  • Servings: 6
  • 1 (8 -10 lb) goose
  • 2 cups water
  • 1 small onion, sliced
  • 1 1/4 teaspoons salt (i use sea salt)
  • 6 cups breadcrumbs
  • 3 tart apples, diced
  • 4 tablespoons melted butter
  • 2 cups celery, chopped
  • 1 medium onion, diced
  • 2 teaspoons salt
  • 1 teaspoon sage
  • 1/4 teaspoon thyme
  • 1/4 teaspoon pepper
  • 1 teaspoon salt
  • 1/4 cup flour

Recipe

  • 1 trim the fat off the goose. rub cavity with 1 teaspoons salt . cook the giblets with the onion, simmer the giblets until done, with water to cover, approximately 1 hour. strain the broth, chop giblets finely, add broth to the stuffing ingredients.
  • 2 stuff the goose lightly, tuck the wings underneath, and put tin foil over the stuffing cavity, tie the drumsticks together. prick the skin all over with a fork. bake at 350 for 3-4 hours,, until the internal temperature is 175-180. remove the goose, let rest for 15-20 minutes while you make the gravy.
  • 3 strain the fat keep 1/4 cup. mix with the remaining salt and flour, use the roasting pan (you don't want to miss all the tasty tidbits on the pan!)stirring and cook for 1 minute. add 2 cups water or broth, stirring constantly, until thickened. scoop the stuffing out of the goose, put the gravy in a gravy boat,.
  • 4 plate the goose. . it is quite a showpiece so i don't carve until everyone has oo'd and ahhd!

  • 3/4 cup butter, softened
  • 2 cups sugar
  • 2 lemons, rind of, grated
  • 4 eggs
  • 3 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 cup milk
  • 2 lemons, juice of
  • 1/2 cup sugar

Recipe

  • 1 cream butter and 2 cups of sugar with lemon rind.
  • 2 add the eggs and beat well.
  • 3 add dry ingredients alternating with milk.
  • 4 squeeze about 1 tbsp of juice from the lemon into batter for better flavor.
  • 5 bake in greased loaf pans in a 325 degree oven for 1 hour.
  • 6 mix 1/2 cup of sugar and juice from the remaining lemons.
  • 7 pour over bread while hot, then cool completely on a wire rack.

Badam/pista Kulfi Ice Cream

Ingredients

  • 1 pint heavy cream
  • 1 can condensed milk (regular tin)
  • 2 slices bread
  • 1/4 cup badam powder (almond)
  • 1/4 cup pista powder (pistachios)

Recipe

  • 1 mix all the above ingredients together in a bowl.
  • 2 make sure eveything blends completely together well.
  • 3 then fill this mixture either in an ice-cream tray or in kulfi cones.
  • 4 refrigerate overnight in the frozen section of your refrigerator.
  • 5 at the time of serving the kulfi, put the cones under the flowing hot water tap for only 1-2 seconds, and with a slight jerk, remove it in the individual serving plates.

Italian Meatballs

  • 3 garlic cloves
  • 2 tablespoons grated cheese
  • 1 tablespoon parsley
  • 1/4 teaspoon salt

  • 2 pieces sliced bread, no crust

  • 1 lb chopped meat

Recipe

  • 1 dice cloves of garlic and put into a medium bowl.
  • 2 add grated cheese, parsley, salt, black pepper, bread (put bread under cold water; ring out; break up), and eggs. mix all ingredients with a fork.
  • 3 add chopped meat and mix well. form into balls.
  • 4 pour enough oil into a large fry pan to cover the bottom. fry meatballs on medium heat until browned on all sides.
  • 5 optional: a quick solution if the meatballs are done before the rest of your meal - place into large pot filled with marinara sauce and cover. let simmer over lowest possible flame until ready to serve (no more than one hour).

  • 1/2 cup water
  • 2 large ripe plantains, peeled and sliced into rounds

  • 1 1/2 teaspoons baking soda
  • 2 teaspoons ground ginger
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground cloves

  • 1 preheat oven to 350°f.
  • 2 use a tablespoon of the butter to grease a 9-inch square baking pan.

Ingredients

  • 1 loaf french bread
  • spaghetti sauce (with hamburger, onions, and favorite sauce, just as though you're making your normal spaghetti)
  • 12 ounces mozzarella cheese

Recipe

  • 1 cut the very top off the loaf of bread, not in half, just a thin sliver off the top, and then scoop out the insides (save that, and the top sliver for croutons).
  • 2 make spaghetti sauce as you normally would, with the hamburger, sausage, or however you normally prepare it.
  • 3 apply a layer of mozzarella cheese in bottom of bread loaf, then a layer of the spaghetti sauce, then more mozzarella, then another layer of spaghetti sauce.
  • 4 do this until the loaf is full.
  • 5 the final layer should be the cheese.
  • 6 place on baking sheet, and bake until hot, and top layer of cheese is melted.
  • 7 cool for about 10 minutes, slice and eat.

Marbled Potatoes

Ingredients

  • 1 lb red potatoes (unpeeled)
  • 1 lb sweet potato (unpeeled)
  • 2 large scallions, chopp4ed
  • 1/4 cup butter
  • 1/2 cup sour cream (or plain yogurt)
  • 1/2 cup whipping cream
  • 1 dash nutmeg (or to taste)
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/4 cup fresh breadcrumb
  • 2 tablespoons butter, melted
  • 2 tablespoons fresh parsley, minced

Recipe

  • 1 cook the red potatoes and the sweet potatoes separately in water to cover in saucepans until tender; drain. cool slightly and peel. mash in separate bowls.
  • 2 saute the scallions in 1/4 cup butter in a skillet until tender. stir half the scallions into each bowl of potatoes.
  • 3 whisk the sour cream and the whipped cream in a bowl. fold half gently into each bowl of potatoes. add half the nutmeg, salt and pepper to each bowl.

  • 1 onion, chopped
  • 2 tablespoons fresh parsley, chopped
  • 2 teaspoons butter
  • 1 lb bread, stale
  • 2 eggs
  • 1 cup milk

Recipe

  • 1 if you do not have stale bread, leave the bread out to dry overnight, or dry in the oven on low. the bread should be in cubes and put into a bowl.
  • 2 butter a 9"x13" baking dish.
  • 3 in a skillet, brown the onion, parsley, and butter over medium heat. pour over the bread crumbs.
  • 4 in a separate bowl, whisk together the eggs, milk, salt, and pepper.
  • 5 pour over the bread crumbs and mix well before leaving to stand for 1 hour.
  • 6 fill a large pot with 3" of water. place a rack in the pot, then put the baking dish on the rack. cover and steam for 1 hour.

  • 2 large plantains, peeled (green)

Recipe

  • 1 preheat oven to 350 degrees f.
  • 2 in a large pot, bring several quarts of water to a boil, then drop the peeled plantains into the boiling water, reduce heat at least to medium-low & cook for about 15 minutes, or until quite tender.
  • 3 drain the plantains, then first chop them up & put them in a large bowl before mashing them somewhat.

Slammin' Salmon Crunchy Cakes With Gayla Sauce

Ingredients

  • 6 tablespoons fat-free mayonnaise
  • 2 teaspoons capers
  • 1/2 teaspoon lemon juice
  • 1/2 teaspoon fresh lemon rind
  • 1/4 teaspoon fresh black pepper
  • 1/8 teaspoon red pepper flakes
  • 1/4 cup red bell pepper, diced (i sometimes use jarred or drained pimientos)
  • 1 teaspoon garlic, minced
  • 4 green onions, chopped
  • 1/4 cup mayonnaise
  • 2 tablespoons lemon juice
  • 1/2 teaspoon seasoning salt
  • 1/2 teaspoon old bay seasoning
  • 1/8 teaspoon dried dill
  • 1/8 teaspoon cayenne
  • 1 small egg, beaten
  • 4 tablespoons dry breadcrumbs
  • 14 3/4 ounces pink salmon, skin and bones removed and flaked
  • 1 cup crushed corn flakes (not too finely or they won't be crunchy like i like them) or 1 cup panko breadcrumbs
  • vegetable oil, for frying

  • 1 combine ingredients for the gayla sauce and refrigerate.
  • 2 sautee red pepper about 3 minutes in a non stick skillet in some butter or margarine. add chopped garlic for the last thirty seconds.
  • 3 combine peppers and garlic and all the rest of the ingredients except corn flakes in a bowl and mix together.
  • 4 make four equal sized balls of this mixture and roll well into cornflake crumbs. pat crumbs firmly and make sure it is well coated.(balls will be about the size of a small baseball).
  • 5 place balls on platter and press into patties about 1 inch thick.
  • 6 fry immediately in a few tablespoons of hot oil in a non stick skillet on medium high heat. (you don't want them to sit around too long or the cornflakes will absorb moisture from the patties and not fry up as crispy.) sear them quickly but of course, do not burn them about 3 or 4 minutes a side.
  • 7 note: after mixing all the ingredients together you may refrigerate this to stiffen mixture up but i don't find it necessary unless you have used a very large egg. you may also make everything ahead of time and refrigerate. simply remove about an hour before dinner and bring to room temperature or they will be hot on the outside but cold in the middle. just don't roll in the cornflake crumbs until the last minute.
  • 8 another note: for a nice variation feel free to add 1/2 tsp or so of cumin to give these a "tex-mex" taste topped with some chili con queso. yum! be creative! this is a drop-to-the-floor-crawl-to-the-door moist patty. make it as directed the first time and then experiment! make it your own.

  • 1 blend shortening and sugar in food processor.
  • 2 add eggs and blend.
  • 3 add bananas and blend.
  • 4 sift, then add: flour, baking powder, baking soda, and salt.
  • 5 stir in chopped nuts.

Plain Ol' Bread Stuffing

Ingredients

  • Servings: 2
  • 6 cups cubed whole wheat bread
  • 2 eggs, beaten
  • 1 tablespoon oil
  • 1 tablespoon butter
  • 2 stalks celery, finely diced
  • 1 onion, finely diced
  • 5 large mushrooms, chopped
  • 1 large garlic clove, minced
  • 2 tablespoons chopped fresh sage

  • 1/4 cup half-and-half, 5%

Recipe

  • 1 heat oven to 375.
  • 2 in medium saute pan, over medium high heat, melt the oil/butter.
  • 3 add the vegetables and saute until softened.
  • 4 add the garlic and continue to cook until fragrant.
  • 5 remove pan from heat and add the sage along with salt and pepper.
  • 6 place bread cubes into a large bowl.
  • 7 add the veg mixture along with the eggs and half/half.
  • 8 mix until all is incorporated.
  • 9 place mixture in a medium, greased, casserole dish.
  • 10 bake in oven for 30 minutes.

  • 1 lb hamburger, lean
  • 1/2 teaspoon pepper
  • 2 cups whole wheat bread crumbs
  • 1 1/2 teaspoons dry mustard
  • 2 eggs, beaten
  • 3/4 milk, fat free
  • 1 1/2 teaspoons salt
  • 2 tablespoons worcestershire sauce
  • 1 onion, chopped
  • 1 bell pepper, chopped

Recipe

  • 1 preheat oven to 350 degrees.
  • 2 *to make fresh bread crumbs, tear sliced whole wheat bread into pieces and add to blender and pulse until all uniform "crumbs".
  • 3 mix together all ingredients in a plastic baggie and spray casserole or meatloaf pan or muffin tin with butter spray and add meat mixture and press into selected pan.
  • 4 bake in 350 degree oven for 45 minutes.

Ingredients

  • 1 1/4 cups warm water
  • 2 teaspoons sugar
  • 2 1/4 teaspoons yeast
  • 2 cups bread flour
  • 1 3/4 cups whole wheat flour
  • 1 tablespoon cocoa
  • 1 teaspoon salt
  • 2 tablespoons butter, softened
  • 1/4 cup honey
  • 2 tablespoons molasses
  • 1 1/4 teaspoons red food coloring
  • 1 teaspoon yellow food coloring
  • 1 teaspoon blue food coloring
  • cornmeal, for dusting
  • 1/4 cup butter, softened
  • 1 -2 teaspoon honey, to taste

Recipe

  • 1 in a small bowl, combine the sugar and warm water; add the yeast and let this mixture sit until it is foamy.
  • 2 while the yeast proofs, combine the bread and wheat flours, cocoa and salt in a large bowl.
  • 3 mix the 2 t butter into the dry mixture with your hands.
  • 4 make a well in the middle of the dry ingredients; pour the honey and molasses into the well.
  • 5 mix the food coloring into the yeast solution and then pour into the well.
  • 6 stir with a wooden spoon until all ingredients are thoroughly combined.
  • 7 put the dough on a floured surface and knead for 10 minutes.
  • 8 roll the dough into a ball and place in an oiled bowl.
  • 9 cover and put in a warm place for 1 1/2 hours or until it has risen to double it's size.
  • 10 when the dough has doubled, divide it into 6 portions.
  • 11 roll each portion about 6" long and 2" wide.
  • 12 put some cornmeal on your rolling surface and moisten your hands with water.
  • 13 rub the dough with your moistened hands and then roll the dough in the cornmeal.
  • 14 put the rolled dough on a baking sheet and cover to rise again.
  • 15 set the dough in a warm place again for about 1 hour or until the loaves are doubled in size.
  • 16 bake at 350 degrees for 35-40 minutes.
  • 17 when done, let it cool for 10-15 minutes.
  • 18 combine the 1/4 c butter and honey (to taste) in a small bowl.
  • 19 whip with a mixer until thoroughly combined.
  • 20 serve on the warm bread.

  • 1/4 cup fat-free cool whip (or any spread of your choice)

  • 2 soften your spread if its hardened.

Ingredients

  • 1 loaf frozen bread dough, thawed
  • 3 ounces sliced pepperoni
  • 6 ounces sliced mozzarella cheese
  • 1/4 lb sliced provolone cheese
  • 1/3 cup spaghetti sauce
  • 1 tablespoon dried parsley
  • 1/2 teaspoon dried oregano
  • 1 egg yolk
  • 1/2 teaspoon water
  • parmesan cheese

Recipe

  • 1 on a lightly floured board, roll dough into a 30 inch x 8 inch rectangle; cut into two 16 inch x 8 inch pieces.
  • 2 on the long side of each piece, layer pepperoni, cheeses, spaghetti sauce, parsley and oregano.
  • 3 fold over dough and pinch to seal.
  • 4 combine egg and water; brush over edges and ends of dough.
  • 5 with a sharp knife, cut five small steam vents in the top of each roll.
  • 6 place on greased baking sheets.
  • 7 sprinkle with parmesan if desired.

Ingredients

  • 7 very ripe plantains or 7 bananas, peeled and finely sliced
  • 10 pints water (6 l)
  • 4 lbs sugar (2 kg)
  • 1 slice bread, toasted cut into 1-inch strips
  • 1 tablespoon fresh yeast (15 g)

Recipe

  • 1 boil the plantains or bananas in the water for 20 minutes, strain and add the sugar to the liquid. set aside to cool. pour into a large jar.
  • 2 spread both sides of each strip of toast with fresh yeast and drop into strained liquid.
  • 3 lightly cover jar with a piece of muslin and store in a cool, safe place for 1 week.
  • 4 strain the liquid after 1 week and store in an airtight container for 3 weeks., then open and strain for a third time.
  • 5 store in an airtight container for a further 1 month.
  • 6 finally, open and strain for the fourth and last time, then bottle as wine and cork.
  • 7 the wine may now be chilled and served as normal, however, the longer it is left, the more mature it will become, so serve when it suits you.

  • 2 preheat oven to 350 degrees. heat olive oil in large skillet and cook onions and garlic until tender. remove to large bowl. add thawed and drained spinach, bread crumbs, cheese, egg, basil, and pepper. mix well. add turkey and turkey sausage and mix gently. form into round loaf and place in 2 quart casserole dish.
  • 3 bake at 350 degrees for 55-65 minutes (it took about 20 minutes more in my oven), or until internal temperature registers 170 degrees. let stand, covered, for 15 minutes before slicing. 6-8 servings.

Hot Italian Tomato And Cream Cheese Dip

Pot Roasted Vegetables With Parmesan And Thyme Dumplings

  • 3 tablespoons olive oil
  • 2 ounces butter
  • 18 small shallots, peeled
  • 2 cloves garlic, crushed
  • 12 ounces jerusalem artichokes, scrubbed
  • 1 small celeriac, about 1 lb,cut into 1 inch dice
  • 12 ounces baby carrots, trimmed and scrubbed
  • 12 ounces turnips, peeled and cut int 1 inch dice
  • 1 teaspoon chopped fresh thyme
  • 1 teaspoon chopped fresh rosemary
  • 7 ounces wine
  • 7 ounces vegetable stock
  • 8 ounces self raising flour (1 cup plus 2 tbs)
  • 2 ounces butter, diced
  • 3 ounces freshly grated parmesan cheese
  • 1 tablespoon fresh thyme leave
  • 1 large egg
  • 6 tablespoons milk

Recipe

  • 1 preheat oven to 180*c, 350*f.
  • 2 pour 2 cups boiling water over the mushrooms in a bowl and soak for 15 to 20 minutes.
  • 3 strain, reserve liquid and roughly chop mushrooms.
  • 4 heat the olive oil and butter in a large flameproof casserole.
  • 5 add the shallots and soften for 1 to 2 minutes.
  • 6 add the garlic and cook until the shallots start to colour.
  • 7 tip the vegetables, thyme and rosemary in and cook over a medium heat for 5 to 6 minutes, until coated in butter and starting to colour.
  • 8 season.
  • 9 pour over the wine, stock and mushroom liquid.
  • 10 allow to come to a gentle bubble, cover and simmer for 8 to 10 minutes.
  • 11 stir in mushrooms.
  • 12 meanwhile, make dumplings.
  • 13 put the flour into a bowl and season.
  • 14 rub in the butter until the mixture resebles breadcrumbs, then mix in the parmesan and thyme and bread the egg into the centre.
  • 15 pour in the milk and stir until it forms a soft dough.
  • 16 turn out onto a floured board and press out to a circle about 6 inches in diameter.
  • 17 cut into six triangles.
  • 18 place the dumplings on top of the vegetables, cover and cook in the oven for 30 minutes until risen nicely.
  • 19 remove the lid, turn oven heat up to 400*f and cook a further 5 to 10 minutes until the vegetables are tender and the dumplings have browned a little.

Meat Lovers Breakfast Bread

  • 2 pillsbury grands refrigerated buttermilk biscuits
  • 2 tablespoons olive oil
  • 6 ounces sausage
  • 1 cup ham
  • 6 slices bacon
  • 1 cup sharp cheddar cheese
  • 3/4 cup italian cheese
  • 1 ounce ranch dressing mix
  • 1/4 cup jalapeno

Recipe

  • 1 preheat oven to 350 degrees.
  • 2 prepare a bundt pan.
  • 3 separate each biscuit and then quarter. place in a large bowl and drizzle with 1 tablespoon of oil.
  • 4 brown the sausage, drain and crumble. cook the bacon and crumble. chop the jalepeno. shred the cheese.
  • 5 add all the meats and cheeses in one bowl with the dry ranch dressing and blend well.
  • 6 remove half of the quartered biscuits and set aside. add half of the meat mixture on the biscuits, then add the remaining biscuits and top with remaining meat mixture. add 1 more tablespoon oil and toss biscuits and meat mixture well.
  • 7 add biscuits to bundt pan. there will be crumbling from the meat mixture - add those in any low spots randomly.
  • 8 place in oven and bake uncovered for 15 minutes. remove and cover and bake for 20 minutes longer or until browned. serve warm. but is still delicious cold.

Skorthalia (garlic Sauce)

Ingredients

  • 5 garlic cloves
  • 1/4 cup vinegar
  • salt
  • 125 g crustless day-old bread
  • 1/2 cup ground almonds
  • 1/2 cup olive oil
  • 1 tablespoon lemon juice
  • fresh ground pepper

Recipe

  • 1 soak halved garlic cloves in vinegar for 10 minutes.
  • 2 remove garlic to a mortar, add 1/2 teaspoon salt and pound to a paste.
  • 3 soak bread in cold water and squeeze dry.
  • 4 crumble into small particles and gradually blend into garlic, adding a little vinegar to smooth the mixture.
  • 5 when well pounded and smooth, transfer to a bowl if mortar is small.
  • 6 gradually beat in ground almonds and olive oil alternately with remaining vinegar.
  • 7 beat in lemon juice and add salt to taste.
  • 8 if mixture is very thick, beat in a little more oil or lemon juice, depending on flavor balance.
  • 9 mixture should be the consistency of stiff mayonnaise.
  • 10 food processor or blender method:
  • 11 soak garlic as above.
  • 12 place all ingredients except oil in container and process or blend until smooth.
  • 13 gradually beat in oil.
  • 14 adjust seasoning, flavor and consistency as above and blend until smooth.
  • 15 do not over-beat as mixture could heat and curdle.

Roast Eggplant Salad With Goat Cheese

  • 2 eggplants, thinly sliced lengthwise
  • 3 tablespoons extra virgin olive oil
  • 12 cherry tomatoes, halved

  • 2 shallots, 1 finely chopped, the other thinly sliced
  • 1 red chili pepper, deseeded and finely chopped
  • 2 ounces goat cheese, crumbled

  • 1 heat the oven to 400°f brush the eggplant slices with 1 tbs of the oil, then season with salt and pepper.
  • 2 arrange on a baking tray or sheet and roast for 20 mins until browned, popping the tomatoes on the tray for the final five minutes.
  • 3 tear the flatbread or pita into pieces and place on a separate baking sheet. brown in the oven for 8 mins or until crisp, then remove.
  • 4 for the dressing, in a small bowl, mix the vinegar, mint, chopped shallot, chili, remaining oil and some salt and pepper.
  • 5 scatter the eggplant slices, tomatoes, sliced shallot and crisp flatbread into a serving bowl. pour over the dressing, sprinkle with the goat cheese and scatter over a little arugula.

Slammin' Banana Bread

  • 3/4 cup walnut pieces
  • 1/4 cup slivered almonds
  • 1/2 cup butter, softened
  • 3/4 cup sugar
  • 1/4 cup brown sugar
  • 2 eggs
  • 2 teaspoons vanilla

  • 1/2 teaspoon nutmeg
  • 2 cups flour (i used bread flour, which is extra soft, may use less if using all-purpose flour?)
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 -3 very ripe bananas, mashed
  • 1/2 cup sour cream

  • 1 preheat oven to 350 (f). spray a large loaf pan with pam.
  • 2 toast nuts gently in a skillet - remove from heat.
  • 3 cream together the butter & sugars in a mixing bow.
  • 4 in a separate, small bowl, whisk eggs, vanilla, cinnamon, & nutmeg. add to creamed sugar/butter.
  • 5 in separate bowl, combine flour, baking soda, and salt. slowly add that to other ingredients.
  • 6 add bananas & sour cream just until combined.
  • 7 pour into loaf pan. bake for ~50-60 minutes. cool on a rack for 10 minutes, then remove from pan and finish cooling on rack. warm, with butter is extra nice 8-).

Italian Mushroom Pate

  • 300 g mushrooms (peeled and chopped)
  • 1 medium onion, finely chopped
  • 3 large garlic cloves
  • 1/4 teaspoon chili powder
  • 2 tablespoons olive oil
  • salt and pepper
  • 1 teaspoon thyme (dried)
  • 2 tablespoons breadcrumbs

Recipe

  • 1 add 1 tbls olive oil to a medium pan (not a non-stick frying pan)
  • 2 finely chop the onion and fry with the crushed garlic until soft, just before they start to brown.
  • 3 add the chopped mushrooms, chili and thyme and continue cooking until the mushrooms are soft. be carful not to overcook, as the mushrooms will make the mixture too liquid.
  • 4 try the mixture and add salt and pepper to taste.
  • 5 take off the heat, add the remaining olive oil and breadcrumbs and mix in a blender. i suggest not blending for too long and the pate will have a nice coarse texture.
  • 6 chill in the fridge until ready to serve.
  • 7 comment:. this is quite spicy so you may want to use less chili. or perhaps more!

Hodas Authentic Hummus

  • 1 mix tahini with olive oil pour in a little at a time until tahini is more of a thick cream not a paste make sure before you scoop out the tahini that it is not seperated in the container.
  • 2 start with 2 lemon's juice.
  • 3 mix tahini and 2 lemons with all the other ingredients and blend until smooth in a food processor.
  • 4 add salt and lemon to taste (if desired).
  • 5 i like to make a dip with a large spoon and add a little more olive oil to the center of the dish

Kanai Inn Banana Bread

  • 6 ripe bananas, mashed

  • 1 in electric mixer, cream together sugar and crisco.
  • 2 add bananas and eggs, mix well.
  • 3 sift together flour, baking soda and salt. add to bananas and mix together.

Greek Tofu Pitas

  • 2 tablespoons olive oil
  • 1/2 cup broth
  • 1/4 cup pesto sauce
  • 3 large garlic cloves, minced
  • 2 teaspoons oregano
  • 2 teaspoons thyme
  • 2 teaspoons rosemary
  • 1 teaspoon lemon juice
  • salt
  • pepper
  • 1/3 cup crumbled feta
  • 1/3 cup tzatziki, sauce
  • 1 cucumber, chopped
  • 1 large tomato, chopped
  • 1/4 cup pitted kalamata olive, chopped
  • 4 pita bread

Recipe

  • 1 drain the tofu and press for 30 min by putting between paper towels with a large weight (book or heavy pan) on top.
  • 2 prepare the marinade by mixing oil, broth, pesto, garlic, oregano, thyme, rosemary, lemon and salt and pepper to taste.
  • 3 cut the tofu into thin strips. marinate the tofu for 1hr minimum, tossing a few times to make sure it is evenly distributed but being careful not to break pieces.
  • 4 meanwhile, combine cucumber, tomato, olive and feta in a bowl.
  • 5 take the tofu out of the marinade (reserve marinade) and fry over very high heat in a non-stick skillet until darkly browned (very important that it is non-stick!). turn off heat and immediately pour extra marinade over tofu.
  • 6 meanwhile, heat up pitas in oven or microwave. cut in half and fill each one with tofu, tzatziki, and veggies.

Lemon Verbena Bread

  • 1/4 cup fresh lemon verbena leaf, chopped
  • 1 sugar
  • 2 large eggs

  • 1 grated lemon, rind of
  • 1/4 cup chopped nuts (optional)
  • 1/2 cup sugar
  • 2 tablespoons fresh lemon verbena leaves, finely chopped

Recipe

  • 1 for the bread cream butter with verbena leaves in a mixer or food processor.
  • 2 add sugar,eggs and milk and beat well.
  • 3 add remaining ingredients and pulse a few times until blended.
  • 4 grease loaf pans (1 large,2 small or 4 mini) and pour in batter.
  • 5 bake at 350º for 30-45 minutes, depending on pan size, or until toothpick inserted in center of bread comes out clean.
  • 6 leave loaf in pan and pour glaze over loaf while still hot.
  • 7 let sit several hours.
  • 8 remove loaf from pan.
  • 9 wrap in foil to ripen overnight if you like, or serve when cool.
  • 10 you can also freeze this bread for later use.
  • 11 glaze: mix together 1/2 cup sugar and 2 tbsp fresh lemon verbena leaves,finely chopped, with the juice of one lemon.

Pot Roast Meatloaf

  • 1/2 cup italian seasoned breadcrumbs

  • 4 cups shredded cheese (your choice, but i use one bag of sharp and one bag of cheddar, it doesn't matter as long as you hav)
  • 1 (12 ounce) box of barilla medium shell noodles (or your choice of brands, i just like barilla best)
  • 2 tablespoons butter

Recipe

  • 1 preheat oven to 350°f
  • 2 bring one large pot of water to a rolling boil.
  • 3 add whole box of shells and a pinch of salt to boiling water, cover and switch to low heat.
  • 4 spray oven safe dish with cooking spray.
  • 5 put milk, one bag of cheese,a few dashes of pepper, the butter and a pinch of salt in the dish; mix well.
  • 6 when noodles are still firm, but partially cooked drain them and add them to the bowl of milk and other mixed ingredients.
  • 7 stir together coating noodles in cheese mixture.
  • 8 cook for 20 minutes.
  • 9 add second bag of cheese and stir.
  • 10 top with breadcrumbs and cook for 15 more minutes or until golden brown at the edges.

Kona Banana Bread

Skordalia

  • 1 lb potato
  • 2 tablespoons chopped garlic
  • 1 teaspoon salt
  • 1/2 cup olive oil
  • 2 teaspoons lemon juice

  • 1 take one pound of potatoes, peeled, diced and boiled until soft.
  • 2 pour out the water and leave them in the pan a couple of minutes to dry out.
  • 3 meanwhile you've taken two tablespoons of chopped garlic and prepared that with a teaspoon of salt and a half a cup of olive oil.
  • 4 the greeks swear that you have to do this by hand, but i've done it with a blender and it works fine.
  • 5 you take the hot potatoes and dump them in the olive oil, salt, and garlic mixture, blend them up until it's smooth.
  • 6 add a couple of teaspoons of lemon juice and then taste it, you might need a little more salt, a little more lemon juice.
  • 7 you want to get where it just kind of hangs on the bread.

  • 1 combine the first 8 ingredients of the marindate then place the thawed turkey in the marinade. rub the turkey with the marinade, then put some of it inside the turkey. marinade for 24 hours in the roasting pan in the fridge, turning it over every couple of hours.
  • 2 remove the turkey from the fridge 2 hours prior to cooking. preheat the oven to 400°f.
  • 3 stuff the turkey with the stuffing. if there is too much, place the balance of the stuffing in a pouch made of a double layer of foil, seal then place in the roasting plan.
  • 4 pour the lemon juice over the turkey, sprinkle with paprika, dot with butter and a drizzle of oil. to the marinade, add the onion and ketchup.

(15 min cooking time per lb of turkey to165 f). allow turkey to rest 20 minutes prior to carving.
  • 6 stuffing: combine all off the ingredients together then add the boiling water to attain a thick consistency. once cool enough to handle, mix well using your hands. add more bread crumbs if too soft and water if too hard then taste and adjust for seasoning. *stuffing can be made a day ahead and stored in the refrigerator in an air tight container.

  • 1 marinate the beef in a mixture of worcestershire sauce (or soy sauce) and soy sauce for between 30 - 60 minutes. this will ensure that even the tougher cuts of meat are tender once cooked. rinse marinade off meat before browning.
  • 2 in a large saucepan, heat 1 tablespoon margarine and 1 tablespoon oil. when the margarine is melted and sizzling, add about ¼ of the beef and brown well. remove the beef cubes from saucepan, place in a bowl and set aside. repeat with the remainder of beef, but in batches. add 1 tablespoon margarine and 1 tablespoon oil between the batches as needed. each batch should brown for about 3 - 4 minutes so the juices are sealed within the cubes.
  • 3 reduce heat and add the onions, chili and their seeds, and cook for about 5 minutes, or until soft. add the garlic and cook for another minute or so. sprinkle the flour over the onion/garlic mixture and stir for about 2 minutes or until thick.
  • 4 add the stock, red wine (or brandy) and bay leaves. stir until the sauce thickens and simmer for about 10 minutes.
  • 5 add the beef cubes together with any juices that may be in the bowl. leave to simmer for about 20 minutes or until beef is tender and cooked. season with salt and pepper.
  • 6 serve in bowls with fresh bread rolls and/or fries.

  • 1 peel the kohlrabi.
  • 2 slice horizontally in 1/4 inch slices.
  • 3 boil these slices in salted water until fork tender, about 20 minutes.
  • 4 drain well and lightly dry off with a cloth or paper towel to remove excess water. a little water remaining is ok.
  • 5 butter a small casserole dish on the bottom and sides with one tablespoon butter.
  • 6 place a layer of sliced kohlrabi as the first layer, cutting into pieces if necessary to fit.
  • 7 sprinkle a layer of your choice of cheese.

  • 5 g active dry yeast

  • 1 in a stand mixer, add all ingredients together and mix on lowest speed for 3 minutes with a dough hook. increase speed to medium and continue to mix for 4 minutes.
  • 2 place dough in a bowl (floured to prevent the dough from sticking) covered with plastic wrap and allow to proof (preferably in a warmer area) for 30 minutes.
  • 3 remove the dough from the bowl and place on a floured surface. form a rectangular shape with the dough and then fold it once, turn it 90 degrees, fold it again, turn it 90 degrees again, and fold it a third time. place it back in the floured bowl and cover for 30 minutes. preheat oven to 485 degrees and place a pan of water on the lower rack.
  • 4 remove the dough from the bowl and repeat the instructions from the previous step. return the dough to the bowl and allow it to rest for 15 minutes.
  • 5 place the dough on a floured surface and split it in two pieces (about 400 g each). roll the dough into the shape of a baguette and place on a sheet pan. with a knife, make one full length slit or several diagonal slits across the top of the dough to allow steam to escape.
  • 6 place the two loaves in the oven and bake for 15 minutes.
  • 7 remove the pan of water from the oven and let the bread continue to cook for another 15 minutes to allow the crust to brown.

  • 2 eggs
  • 1/3 cup flour
  • 1 tablespoon worcestershire sauce
  • 1 teaspoon hot sauce
  • 1 teaspoon garlic powder
  • 1 teaspoon cajun seasoning
  • 1 teaspoon pepper
  • 1 1/2 cups panko breadcrumbs
  • ranch dressing, and hot sauce for dipping

Recipe

  • 1 turn oven broiler on high.
  • 2 in a medium bowl, whisk together eggs and flour.
  • 3 add worcestershire sauce, hot sauce, garlic powder, cajun seasoning, and pepper. mix well.
  • 4 place panko bread crumbs in a shallow dish.
  • 5 dunk each pickle slice into the egg mixture, than dredge it in the panko bread crumbs.
  • 6 place coated pickles on a rack set above a baking sheet and sprayed with non-stick cooking spray.
  • 7 place pan in the middle rack of the oven. broil for about 3 minutes on each side.
  • 8 serve with ranch dressing and a dash of hot sauce.

Mini Lentil Meatballs

Ingredients

  • Servings: 10
  • 1 garlic clove
  • 1 small onion, peeled
  • 1 1/2 cups cooked lentils, rinsed, drained (a 15 oz can is fine)
  • 3 tablespoons nutritional yeast
  • 2 tablespoons vital wheat gluten
  • 2 tablespoons soy sauce
  • 1 tablespoon tomato paste
  • 1 teaspoon olive oil
  • 2 tablespoons water
  • 1/2 cup breadcrumbs, seasoned (store bought)

Recipe

  • 1 in a food processor, add the garlic and pulse until finely chopped.
  • 2 now add the onion and pulse until minced. you don’t want any big pieces or they will ruin the texture of the meatball.
  • 3 with a plastic spatula, transfer the onion/garlic mixture to a mixing bowl and set aside. it’s okay if some remnants are left, just try to get most of it.
  • 4 now in the food processor, pulse the lentils, nutritional yeast, wheat gluten, soy sauce, tomato paste, olive oil and water.
  • 5 once everything gets mixed well, puree them until totally smooth, scraping down the sides to make sure you get everything.
  • 6 combine this mixture with the onion mixture and add in the breadcrumbs. mix really well with your hands for about 2 minutes.
  • 7 preheat oven to 350°f.
  • 8 roll the meatballs into cherry sized balls.
  • 9 preheat a large skillet over medium heat and pour in a thin layer of olive oil. you don’t want to crowd the pan, so pan fry in two batches. you should be able to tilt the pan and have all the meatballs roll around and get coated in oil, cooking until browned (no more than 5 minutes.).
  • 10 transfer first batch to a baking pan, cook the second batch, and transfer all meatballs to the baking pan.
  • 11 bake for 18 to 20 minutes, shaking the pan every once in awhile to toss the balls so that they cook evenly.

Skipps Greek Chicken

  • 8 ounces sour cream
  • 1/4-1/3 cup all purpose greek seasoning
  • 3 large chicken breasts
  • 1 -2 cup breadcrumbs

Recipe

  • 1 mix greek seasoning and sour cream
  • 2 spread over chicken and allow to marinate over night.
  • 3 about an hour or two before baking, flip chicken and make sure bottom of breast is covered in sour cream mixture.
  • 4 roll in bread crumbs and bake in a preheated 375 degree oven for about 45 minutes to an hour.
  • 5 note: prep time does not include marinate time!

Mini Garlic Bread

  • 1 english muffin, split
  • 1 1/2 teaspoons margarine
  • 1/2 teaspoon garlic powder
  • 2 tablespoons shredded cheese
  • 1/2 tablespoon parsley

Recipe

  • 1 partially toast english muffin, just to crisp it slightly.
  • 2 butter and sprinkle garlic powder on each slice. top each slice with shredded cheese and parsley.
  • 3 return to toaster oven (or place under broiler in oven) until cheese is melted and edges are brown.
