jim's old fashioned oyster dressing

Ingredients

  • Servings: 12
  • 2 (1 1/2) pounds loaves of bread, cut into 1-inch cubes
  • 1 cup butter
  • 1 1/2 onion, minced
  • 4 cloves garlic, minced
  • 2 stalks celery, chopped
  • 1/2 cup chopped fresh parsley
  • 4 pints shucked oysters

  • spread the bread cubes out baking sheets or a work surface, and allow to dry for 24 to 48 hours (longer for a drier dressing).
  • melt the butter in a large skillet over medium heat, and cook and stir the onion, garlic, and celery until the onions become translucent, about 8 minutes. pour the vegetables and butter into a large bowl. lightly mix in the bread cubes, and stir in the oysters and their liquid until thoroughly combined.

  • 1 (.25 ounce) envelope active dry yeast
  • 5 pounds all-purpose flour

  • 2 tablespoons butter, melted

Recipe

    Cook Time: 1 hr

    Ready Time: 2 hrs

  • dissolve sugar in about 1 cup of the water. sprinkle the yeast over the top. let stand for about 10 minutes, until foamy.
  • in a large bowl, mix together the yeast mixture, water, oil, and about half of the flour until well blended. gradually mix in the rest of the flour until the dough is stiff enough to take out of the bowl. knead on a floured surface until smooth and elastic, about 10 minutes. place dough in a greased bowl, and cover with a cloth. allow to rise in a warm place until doubled in size. this will take 1 to 2 hours.
  • divide dough into sections about the size of a grapefruit. form into smooth balls, cover with a cloth, and let rise again for about 30 minutes.
  • on a lightly floured surface, flatten each ball to 1/2 inch thickness, pressing out with your fingers. circles should be about 8 inches across. place on an oiled baking sheet. let rest for about 10 minutes, or while you preheat the oven .
  • preheat the oven to 450 degrees f (230 degrees c).
  • bake rounds until the top is lightly browned, 10 to 12 minutes. remove from the oven, and brush with melted butter. repeat with remaining bread.

  • preheat an electric griddle or fry pan to medium-high, about 350 degrees f (175 degrees c). stir the flour, salt, baking powder, and baking soda together in a large bowl until well combined.
  • stir in the buttermilk, 1/2 cup at a time, until the mixture forms a very sticky ball of dough. turn the dough out a well-floured surface, and knead gently 8 to 10 times. pat the dough into a circle about 1 1/2 inch thick, and cut the circle into quarters.

  • 2 (.25 ounce) packages instant yeast
  • 1 cup lukewarm water
  • 1 quart warm water
  • 1 tablespoon salt
  • 1 teaspoon ground ginger
  • 2 tablespoons sugar
  • 1/2 cup fennel seed
  • 1/3 cup unsulfured molasses
  • 1 tablespoon melted butter
  • 2 cups rye flour
  • 1 1/2 cups golden raisins
  • 9 cups bread flour

  • in a small bowl, dissolve the yeast in 1 cup of lukewarm water. let stand until foamy, about 10 minutes.
  • in a large bowl, stir together the quart of warm water, salt, ginger, sugar, fennel, molasses, and melted butter. mix in the yeast slurry and rye flour, breaking up any lumps of flour with a whisk. stir in raisins. work in the bread flour 1/2 cup at a time, until the dough becomes stiff.

  • in a small bowl, dissolve yeast and sugar in warm water. let stand until creamy, about 10 minutes.
  • in a separate bowl, sift together 4 1/2 cups flour, salt, curry powder and turmeric. make a well in the center of flour mixture. pour in yeast mixture and 1/2 cup clarified butter. stir in the remaining 4 cups flour, 1/2 cup at a time, until a stiff dough is formed. when the dough has pulled together, turn it out a lightly floured surface and knead until smooth and elastic, about 8 minutes.
  • grease a bowl with remaining clarified butter, place the dough in the bowl and turn to coat with butter. cover with a damp cloth and let rise in a warm place until doubled in volume, about 4 hours.
  • after 4 hours punch dough down, flip over and let rise for 2 more hours.
  • deflate the dough and turn it out a lightly floured surface. divide the dough into two equal pieces and form into loaves. place the loaves into two lightly greased 9x5 inch loaf pans. preheat oven to 400 degrees f (200 degrees c).
  • bake dough in preheated oven for 45 to 60 minutes, until loaves are golden brown and sound hollow when tapped.

  • soak currants in overnight.

potato chapati bread

Ingredients

  • 1 cup mashed potatoes
  • salt to taste
  • 1/2 teaspoon cayenne pepper
  • 1/2 teaspoon ground turmeric

  • preheat oven to 350 degrees f (175 degrees c). lightly grease a 9x5 inch loaf pan.
  • in a large bowl, combine flour, baking soda and salt. in a separate bowl, cream together butter and brown sugar. stir in eggs and mashed bananas until well blended. stir banana mixture into flour mixture; stir just to moisten. pour batter into prepared loaf pan.
  • bake in preheated oven for 60 to 65 minutes, until a toothpick inserted into center of the loaf comes out clean. let bread cool in pan for 10 minutes, then turn out a wire rack.

banana banana bread
