Pumpkin Loaf

Total Time: 1 hr 5 mins Preparation Time: 15 mins Cook Time: 50 mins

Ingredients

  • 4 eggs
  • 2 cups sugar
  • 1 1/2 cups oil
  • 2 cups canned pumpkin (reserve 3 tbsp for glaze)
  • 3 cups flour
  • 1 1/2 tablespoons cinnamon
  • 1 1/2 teaspoons ground ginger
  • 1 teaspoon ground nutmeg
  • 2 teaspoons baking soda
  • 2 teaspoons baking powder
  • 1 teaspoon salt
  • glaze
  • 6 tablespoons butter (softend)
  • 3 tablespoons pumpkin
  • 2 1/2 tablespoons icing sugar
  • 1 pinch salt
  • 3/4 teaspoon cinnamon
  • 3 tablespoons milk
  • 1 1/2 teaspoons vanilla

Recipe

  • 1 mix dry ingredients together and in separate bowl mix wet ingredients together and pour wet into dry, do not over mix or loaves will be heavy, ( batter will be thick).
  • 2 spray pans with cooking spray.
  • 3 divid batter into two pans
  • 4 bake at 350 degrees for 50-60 minute.
  • 5 remove from pans and while still warm but not hot spread glaze over top.
  • 6 slice and enjoy.
