Pumpkin Pecan Protein Power Muffins

Total Time: 25 mins Preparation Time: 10 mins Cook Time: 15 mins

Ingredients

  • 1/2 cup sugar, organic
  • 1/4 cup unsweetened applesauce
  • 1 (15 ounce) can pumpkin
  • 1/4 cup egg
  • 3/4 cup soymilk, vanilla
  • 1/2 cup wheat germ
  • 1/2 cup vanilla protein powder
  • 1 1/2 cups whole wheat flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 1 teaspoon nutmeg
  • 1 dash ground ginger
  • 1/2 cup pecan pieces

Recipe

  • 1 preheat oven to 350 degrees f.
  • 2 combine sugar and wet ingredients.
  • 3 add dry ingredients and mix well.
  • 4 fill greased muffin tins (makes twelve muffins).
  • 5 bake for 15-20 min, checking for done-ness after 15 minutes.
