One-of-a-kind Bread Pudding

Ingredients
- 4 -5 cups shredded bread
- 3 eggs
- 1/2 cup raisins (optional)
- 1 -1 1/2 cup sugar (to taste)
- 3 -4 cups milk
- 1 cup dried coconut
- 1/2 teaspoon salt
- 1/2 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- 5 tablespoons butter
- 1 teaspoon vanilla essence
Recipe
- 1 heat oven to 325 degrees farenheit.
- 2 beat the eggs just until properly mixed.
- 3 place all of the ingredients except butter into a large bowl and mix well. let rest for about 10 minutes.
- 4 pour into a well greased 10" or 11" rectangular glass baking dish.
- 5 dot the top with the softened butter.
- 6 bake until when a skewer inserted comes out clean and top is golden brown and crisp along the sides, about 1 hour to 1 hour and a half.
- 7 it may look a bit jiggly like a custard, but dont worry! it will set once cool.
- 8 i like it hot, but you can serve it cold also or at room temperature.
