Light Cinnamon Swirl Quick Bread

Total Time: 1 hr Preparation Time: 15 mins Cook Time: 45 mins

Ingredients

  • 1/2 cup splenda granular, sugar substitute
  • 1/4 cup butter, softened
  • 1/4 cup egg substitute
  • 1 teaspoon cinnamon extract
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1 cup 2% buttermilk
  • 1 tablespoon cinnamon
  • 1/3 cup sugar

Recipe

  • 1 preheat oven to 350 degrees.
  • 2 spray bottom of 9x5 pan with nonstick spray.
  • 3 in mixing bowl, beat together splenda, butter, egg substitute and cinnamon extract.
  • 4 combine baking powder, baking soda, salt and flour.
  • 5 add the flour mixture to the egg mixture.
  • 6 add the buttermilk, mixing well to combine.
  • 7 in small bowl, combine cinnamon and sugar.
  • 8 pour 1/2 the batter into greased pan. sprinkle with 1/2 the cinnamon/sugar mixture. repeat.
  • 9 bake for 40-45 minutes.
  • 10 remove from pan and cool.
