Cucumber-feta Salsa With Pita Chips

Ingredients

  • Servings: 8
  • 3 (8 inch) pita bread, split in half
  • cooking spray
  • 1/4 teaspoon salt
  • 1 cup crumbled feta cheese
  • 2 tablespoons fresh lemon juice
  • 1/4 teaspoon fresh ground black pepper
  • 1 1/2 cups cubed seeded peeled cucumbers
  • 1 cup finely chopped red onion
  • 3 tablespoons chopped fresh mint
  • 3 tablespoons chopped fresh dill
  • 8 lemon wedges

Recipe

  • 1 preheat oven to 350°f.
  • 2 to prepare pita chips, cut each pita half into 8 wedges.
  • 3 arragne wedges in a single layer on a baking sheet coated with cooking spray.
  • 4 lightly coat pita wedges with cooking spray; sprinkle with salt.
  • 5 bake at 350 degrees for 10 minutes or until crisp.
  • 6 to prepare salsa, combine feta cheese, juice, and pepper; partially mash with fork.
  • 7 add cucumber, onion, mint, and dill.
