Pumpkin Pecan Bread

Total Time: 1 hr 20 mins Preparation Time: 20 mins Cook Time: 1 hr

Ingredients

  • 2 3/4 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 tablespoon pumpkin pie spice
  • 1 cup pecans, finely chopped
  • 1 cup butter, softened
  • 1 cup granulated sugar
  • 1 cup brown sugar, packed
  • 4 eggs
  • 1 cup solid pack pumpkin

Recipe

  • 1 in small bowl, combine flour, baking powder, baking soda, salt, pumpkin pie spice, and pecans; set aside.
  • 2 in large mixer bo,.m wl, cream butter and sugars until light.
  • 3 add eggs, one at a time, beating well after each addition.
  • 4 blend in pumpkin.
  • 5 add dry ingredients; mix just until moistened.
  • 6 turn into 2 greased and floured 8x4 loaf pans.
  • 7 bake in a preheated 350 degree oven for 1 hour 10 minutes, or until toothpick comes out clean.
  • 8 cool 10 minutes, remove from pans; cool completely on wire racks.
