Pumpkin Pear Muffins

Ingredients
- 2 cups flour
- 1 cup whole wheat flour
- 2 teaspoons baking soda
- 1 tablespoon pumpkin pie spice
- 1 teaspoon salt
- 1 1/2 cups sugar
- 1/2 brown sugar
- 1 cup granulated splenda sugar substitute
- 1 (15 ounce) can pumpkin puree
- 4 eggs
- 3/4 cup applesauce
- 1/4 cup vegetable oil
- 1 pear, peeled cored, and diced
- 1 small apple, peeled cored, and diced
- 1/4 cup fresh cranberries
- 1/4 cup pecan pieces
Recipe
- 1 preheat oven to 350
- 2 mix together all dry ingredients and set aside.
- 3 combine pumpkin, eggs, oil, and applesauce in a mixer bowl and beat just until blended. do not overbeat.
- 4 add pumpkin/applesauce mixture to dry ingredients and mix until moistened. do not overmix.
- 5 fold in cranberries, apple and pear chunks and pecans.
- 6 pour into prepared muffin tins or papers.
- 7 bake at 350 for 30-40 minutes (check at 30).
