Pumpkin Pear Muffins

Total Time: 50 mins Preparation Time: 15 mins Cook Time: 35 mins

Ingredients

  • 2 cups flour
  • 1 cup whole wheat flour
  • 2 teaspoons baking soda
  • 1 tablespoon pumpkin pie spice
  • 1 teaspoon salt
  • 1 1/2 cups sugar
  • 1/2 brown sugar
  • 1 cup granulated splenda sugar substitute
  • 1 (15 ounce) can pumpkin puree
  • 4 eggs
  • 3/4 cup applesauce
  • 1/4 cup vegetable oil
  • 1 pear, peeled cored, and diced
  • 1 small apple, peeled cored, and diced
  • 1/4 cup fresh cranberries
  • 1/4 cup pecan pieces

Recipe

  • 1 preheat oven to 350
  • 2 mix together all dry ingredients and set aside.
  • 3 combine pumpkin, eggs, oil, and applesauce in a mixer bowl and beat just until blended. do not overbeat.
  • 4 add pumpkin/applesauce mixture to dry ingredients and mix until moistened. do not overmix.
  • 5 fold in cranberries, apple and pear chunks and pecans.
  • 6 pour into prepared muffin tins or papers.
  • 7 bake at 350 for 30-40 minutes (check at 30).
