Pumpkin Patch Bread

Total Time: 1 hr 35 mins Preparation Time: 15 mins Cook Time: 1 hr 20 mins

Ingredients

  • 1 1/2 cups sugar
  • 1 cup canned pumpkin
  • 1/2 cup vegetable oil
  • 1/2 cup water
  • 2 eggs
  • 1 2/3 cups all-purpose flour
  • 1 teaspoon baking soda
  • 3/4 teaspoon salt
  • 1/2 teaspoon ground cloves
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon baking powder
  • 1/2 cup chopped pecans

Recipe

  • 1 in a large mixing bowl, combine the first 5 ingredients.
  • 2 combine the flour, baking soda, salt, spices and baking powder; gradually add to pumpkin mixture and mix well.
  • 3 fold in pecans.
  • 4 pour into a greased 9 x 5 x 3 inch loaf pan.
  • 5 bake at 350 for 70-80 minutes or until a toothpick inserted near the center comes out clean.
  • 6 cool for 10 minutes before removing from loaf pan to a wire rack to cool.
