Pumpkin Oatmeal Loaf

Ingredients

  • 1 cup quick-cooking oats
  • 1 cup finely chopped dates
  • 1 cup chopped raisins
  • 1 cup chopped pecans
  • 1 1/2 cups hot milk
  • 1 teaspoon vanilla extract
  • 2 eggs, beaten
  • 1/2 cup pumpkin
  • 2 cups all-purpose flour
  • 3/4 cup sugar
  • 1 tablespoon baking powder
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg

Recipe

  • 1 combine oats, dates, raisins, pecans, and milk; mix well, and let stand 10 minutes. stir in vanilla, eggs, and pumpkin.
  • 2 combine remaining ingredients; mix well, and gradually stir into oat mixture. spoon into a greased and floured 9x5x3 inch loaf pan; bake at 350 degrees about 65 minutes or until a wooden pick inserted in center comes a clean. cool on wire rack.
