Pumpkin Nut Bread

Total Time: 55 mins Preparation Time: 15 mins Cook Time: 40 mins

Ingredients

  • 2 cups sugar
  • 1 cup vegetable oil
  • 3/4 cup water
  • 4 eggs
  • 16 ounces pumpkin, pureed
  • 3 cups all-purpose flour
  • 2 teaspoons baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon
  • 1 teaspoon clove
  • 1 teaspoon nutmeg
  • 1/2 teaspoon allspice
  • 1 cup pecans, chopped
  • 1/2 cup currants

Recipe

  • 1 preheat oven to 350.
  • 2 spray 2 9x5x3 loaf pans.
  • 3 sift dry ingredients together.
  • 4 mix sugar, oil, water, eggs and pumpkin together.
  • 5 stir in dry ingredients.
  • 6 mix in pecans and currants.
  • 7 divide batter between pans and bake until tests done.
