Ginger Pear Vanilla Quick Bread, Light

Ingredients

- 2 cups unbleached flour
- 1 cup splenda sugar substitute
- 1/2 teaspoon ground ginger (more if you like a strong ginger)
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1/4 cup margarine
- 1/2 egg
- 1 1/2 teaspoons vanilla extract
- 1/2 lemon, zest of
- 1/3 cup skim milk
- 1 1/2 cups pears (sliced, peeled, and then diced)
Recipe
- 1 pre-heat oven to 350 degrees f.
- 2 spray a 9x5" bread pan with pam
- 3 sift flour, splenda, baking powder, baking soda, salt, and ground ginger together in a bowl and set aside.
- 4 melt margarine.
- 5 add in lemon zest and egg whites.
- 6 add the liquids, milk las, the dry ingredients.
- 7 mix in until flour starts to disappear.
- 8 fold the diced pears into the batter and then scrape the batter in to bread pan.
- 9 cook for 50-60 minutes but check the bread sooner as splenda items tend to bake faster.
