Ginger Shortbread

Ingredients

  • 1/2 cup icing sugar
  • 2 cups flour
  • 1 teaspoon ginger
  • 1 cup butter
  • 1/2 cup candied ginger, chopped

Recipe

  • 1 combine icing sugar, flour and ginger.
  • 2 cut in butter.
  • 3 mix together with your hands, as per a pie crust. when mixture holds together work in candied ginger.
  • 4 press into an ungreased 9-inch square pan, about 1/2-inch thick.
  • 5 prick through to bottom of the dough with a fork.
  • 6 bake at 300 degrees f for 50-60 minutes.
  • 7 while warm, cut into desired shapes.
