Potato Puffs

Total Time: 25 mins Preparation Time: 10 mins Cook Time: 15 mins

Ingredients

  • 1 cup flour
  • 2 tablespoons snipped parsley
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/8 teaspoon onion powder
  • 2 beaten eggs
  • 1 cup mashed potatoes
  • cooking oil (for deep-fat frying)

Recipe

  • 1 combine flour, parsley, baking powder, salt and onion powder.
  • 2 stir in eggs and mashed potatoes, mixing well.
  • 3 heat 1 1/2 inches of oil to 365ºf degrees.
  • 4 using about 1 well rounded tablespoon for each, drop potato mixture into hot oil a few at a time.
  • 5 fry for 3 to 4 minutes or until golden brown.
  • 6 drain on paper towel.
