Potato Puffs

Ingredients
- 1 cup flour
- 2 tablespoons snipped parsley
- 1 1/2 teaspoons baking powder
- 1/2 teaspoon salt
- 1/8 teaspoon onion powder
- 2 beaten eggs
- 1 cup mashed potatoes
- cooking oil (for deep-fat frying)
Recipe
- 1 combine flour, parsley, baking powder, salt and onion powder.
- 2 stir in eggs and mashed potatoes, mixing well.
- 3 heat 1 1/2 inches of oil to 365ºf degrees.
- 4 using about 1 well rounded tablespoon for each, drop potato mixture into hot oil a few at a time.
- 5 fry for 3 to 4 minutes or until golden brown.
- 6 drain on paper towel.
