Oatmeal Banana Bread Pancakes

Ingredients

  • Servings: 4
  • 1 1/2 cups all-purpose flour
  • 1 cup rolled oats
  • 1/4 cup brown sugar, packed
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 1/2 cups milk
  • 2 eggs, beaten
  • 2 ripe bananas, mashed (about 3/4 cup)
  • 3 tablespoons butter, melted
  • 2 teaspoons vanilla
  • 1 tablespoon vegetable oil

Recipe

  • 1 in a large bowl, whisk together the flour, oats, sugar, baking powder, baking soda and salt.
  • 2 in a separate bowl, whisk together the milk, eggs, bananas, butter and vanilla.
  • 3 pour over the flour mixture and stir until almost smooth.
  • 4 let stand for 10 minutes.
  • 5 heat a nonstick skillet or griddle to medium heat.
  • 6 brush lightly with some of the oil.
  • 7 pour in about 1/3 cup batter for each pancake.
  • 8 cook for about 3 minutes or until the underside is golden and bubbles break on top but do not fill inches.
  • 9 turn and cook until the underside is golden brown, about 1 minute.
  • 10 repeat with remaining batter, brushing skillet with more oil if necessary.
