Reuben Meatloaf

Total Time: 50 mins Preparation Time: 5 mins Cook Time: 45 mins

Ingredients

  • Servings: 6
  • 1 1/2 lbs ground beef
  • 1 cup rye breadcrumbs
  • 1/2 cup russian salad dressing or 1/2 cup thousand island dressing
  • 1 egg
  • 1/4 teaspoon pepper
  • 1 (8 ounce) can sauerkraut, rinsed and drained
  • 1/2 cup swiss cheese, shredded

Recipe

  • 1 combine ground beef, bread crumbs, dressing, egg and pepper.
  • 2 pat into approximately a 10x12 rectangle on a piece of waxed paper.
  • 3 top with sauerkraut and swiss cheese, and roll up like a jelly roll.
  • 4 seal ends and place seam side down into a meatloaf pan.
  • 5 bake at 350 for 45 minutes or until done.
  • 6 i usually sprinkle a little more cheese on top and put it back into the oven to melt it.
