Dairy-free For "little Me" Pineapple Stuffing

Total Time: 1 hr 15 mins Preparation Time: 15 mins Cook Time: 1 hr

Ingredients

  • Servings: 4
  • 1 (8 ounce) can crushed pineapple, drained
  • 4 eggs, beaten
  • 5 slices bread, cubed
  • 3/4 cup brown sugar
  • 1/2 cup extra virgin olive oil
  • 2 tablespoons extra virgin olive oil
  • 1/4 teaspoon cinnamon
  • cooking spray

Recipe

  • 1 preheat oven to 375 degrees and prep 8" square glass cooking dish by spraying thoroughly with cooking spray.
  • 2 using a fork, beat both measurements of olive oil into the sugar and cinnamon; stir in the crushed pineapple.
  • 3 add the cubed bread, being sure not to over-mix.
  • 4 fill the glass cooking dish with the mixture.
  • 5 cook for 30 minutes or until the top look browned.
  • 6 let stuffing in the pan for 5 minutes before serving.
  • 7 enjoy!
