Dairy-free For "little Me" Pineapple Stuffing

Ingredients

- 1 (8 ounce) can crushed pineapple, drained
- 4 eggs, beaten
- 5 slices bread, cubed
- 3/4 cup brown sugar
- 1/2 cup extra virgin olive oil
- 2 tablespoons extra virgin olive oil
- 1/4 teaspoon cinnamon
- cooking spray
Recipe
- 1 preheat oven to 375 degrees and prep 8" square glass cooking dish by spraying thoroughly with cooking spray.
- 2 using a fork, beat both measurements of olive oil into the sugar and cinnamon; stir in the crushed pineapple.
- 3 add the cubed bread, being sure not to over-mix.
- 4 fill the glass cooking dish with the mixture.
- 5 cook for 30 minutes or until the top look browned.
- 6 let stuffing in the pan for 5 minutes before serving.
