Queen Of Puddings

Total Time: 1 hr 5 mins Preparation Time: 10 mins Cook Time: 55 mins

Ingredients

  • Servings: 8
  • 1 cup fresh breadcrumbs
  • 2 cups milk
  • 2 eggs, separated
  • 1/2 cup sugar
  • 3 tablespoons strawberry jam
  • 1 cup strawberry, sliced

Recipe

  • 1 scald milk and pour over breadcrumbs. leave stand for about 30 minutes.
  • 2 beat the egg yolks with half the sugar and sti into crumb mix.
  • 3 spoon this mix into a greased ovenproof dish and bake at 325°f for 45 minutes or until firm to the touch. remove from oven.
  • 4 increase oven temperature to 375°f.
  • 5 combine strawberry jam and sliced strawberries and spread over the custard.
  • 6 whip egg whites until stiff, then beat in remaining sugar to form a meringue.
  • 7 swirl meringue over top.
  • 8 bake for 8-10 minutes or until meringue is set and lightly browned.
  • 9 serve hot or warm.
