Potato Scones

Total Time: 35 mins Preparation Time: 20 mins Cook Time: 15 mins

Ingredients

  • 1 cup flour
  • 1 tablespoon sugar
  • 2 1/2 teaspoons baking powder
  • 4 tablespoons margarine or 4 tablespoons butter
  • 1 cup warm mashed potatoes
  • 1 egg
  • 1/4 cup buttermilk
  • 1/4 cup finely chopped watercress leaf

Recipe

  • 1 sift dry ingredients together cut in margarine/butter.
  • 2 blend in potatoes and watercress.
  • 3 beat egg with buttermilk and add to mixture.
  • 4 rll out dough 1/2 inch thick, using enough extra flour to keep it from sticking.
  • 5 cut in triangles.
  • 6 bake at 400°f for minutes.
