Potato Scones

Ingredients
- 1 cup flour
- 1 tablespoon sugar
- 2 1/2 teaspoons baking powder
- 4 tablespoons margarine or 4 tablespoons butter
- 1 cup warm mashed potatoes
- 1 egg
- 1/4 cup buttermilk
- 1/4 cup finely chopped watercress leaf
Recipe
- 1 sift dry ingredients together cut in margarine/butter.
- 2 blend in potatoes and watercress.
- 3 beat egg with buttermilk and add to mixture.
- 4 rll out dough 1/2 inch thick, using enough extra flour to keep it from sticking.
- 5 cut in triangles.
- 6 bake at 400°f for minutes.
