Mixed Nut Brittle

Total Time: 25 mins Preparation Time: 5 mins Cook Time: 20 mins

Ingredients

  • 1 1/2 cups sugar
  • 1 cup lite corn syrup
  • 1/3 cup water
  • 4 cups mixed nuts
  • 2 teaspoons butter
  • 2 tablespoons butter
  • 1 teaspoon vanilla
  • 1/2 teaspoon salt

Recipe

  • 1 in a large, heave saucepan, combine the sugar, corn syrup and water.
  • 2 cover and bring to a boil over medium heat.
  • 3 uncover and cook until candy thermometer reads 290.
  • 4 meanwhile, grease a jelloroll pain with 2 teaspoons butter, set aside.
  • 5 place nuts in 2 ungreased jellyroll pans; bake at 325 for 10 mintes. (keep warm until ready to use.).
  • 6 remove sugar mixture from heat; carefully stir in the nuts, vanilla, salt and remaining butter. quickly spread into prepared pan. cool completely; bread into pieced.
