Potato Scones

Total Time: 20 mins Preparation Time: 10 mins Cook Time: 10 mins

Ingredients

  • 1 cup warm mashed potatoes
  • 1/3 cup melted butter
  • 1 teaspoon salt
  • 1/2 cup all-purpose flour (sieved)

Recipe

  • 1 preheat a 12-inch seasoned cast-iron frying pan or griddle over moderate heat.
  • 2 mix together all ingredients until thoroughly blended.
  • 3 turn the doughout onto a floured board and divide into thirds.
  • 4 roll into a circleabout 1/4 inch thick.
  • 5 score each circle into 6 wedges.
  • 6 sprinkle the griddle with flour and bake each circle for about 5 minutes, until edges begin to brown, turning once to cook both sides.
  • 7 serve hot or cold.
