Potato Scones

Ingredients
- 1 cup warm mashed potatoes
- 1/3 cup melted butter
- 1 teaspoon salt
- 1/2 cup all-purpose flour (sieved)
Recipe
- 1 preheat a 12-inch seasoned cast-iron frying pan or griddle over moderate heat.
- 2 mix together all ingredients until thoroughly blended.
- 3 turn the doughout onto a floured board and divide into thirds.
- 4 roll into a circleabout 1/4 inch thick.
- 5 score each circle into 6 wedges.
- 6 sprinkle the griddle with flour and bake each circle for about 5 minutes, until edges begin to brown, turning once to cook both sides.
- 7 serve hot or cold.
