Pumpkin Bread

Total Time: 1 hr 10 mins Preparation Time: 15 mins Cook Time: 55 mins

Ingredients

  • 3 1/2 cups flour
  • 2 teaspoons baking soda
  • 1 teaspoon cinnamon
  • 1 teaspoon baking powder
  • 1 teaspoon ground cloves
  • 1 teaspoon ground nutmeg
  • 1/2 teaspoon salt
  • 2 cups solid pack pumpkin (not pie filling)
  • 1 cup oil
  • 3 cups sugar
  • 3 eggs
  • 1 cup chopped nuts
  • 1 cup raisins
  • 1 1/2 cups confectioners' sugar
  • 1 teaspoon orange zest
  • 6 teaspoons orange juice
  • additional nuts

Recipe

  • 1 preheat oven to 350*.
  • 2 spray two loaf pans with no stick spray.
  • 3 in a med.
  • 4 bowl combine 1st 7 ingredients, set a side.
  • 5 in a large bowl mix pumkin, oil, eggs, and sugar.
  • 6 mix well.
  • 7 add dry ingredients and mix well.
  • 8 by hand stir in nuts and raisins.
  • 9 divide batter between two loaf pans.
  • 10 bake for 50-55 min.
  • 11 cool for 15 min.
  • 12 remove from pans cool on wire rack.
  • 13 orange glaze: combine sugar, orange peel and juice in a small bowl.
  • 14 stir with spoon.
  • 15 spoon over top off cooled loaves letting excess run down sides.
  • 16 sprinkle with nuts and orange peel.
