Farmers Market Gazpacho

Total Time: 15 mins Preparation Time: 10 mins Cook Time: 5 mins

Ingredients

  • Servings: 4
  • 2 large tomatoes
  • 2 pickling cucumbers
  • 1 red bell pepper
  • 1/4 of a small red onion
  • 1 slice bread
  • 1 small garlic clove
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 2 teaspoons red wine vinegar or 2 teaspoons sherry wine vinegar
  • 1 tablespoon extra-virgin olive oil

Recipe

  • 1 core the tomatoes and pepper and cut them into large dice.
  • 2 trim the ends off the cucumber and onion cut them into large dice.
  • 3 cut the crust off the bread slice and cut it into large dice.
  • 4 crush and roughly mince the garlic.
  • 5 put the tomatoes and cucumber in a blender and blend until the mixture is more liquid than solid.
  • 6 add the rest of the ingredients and blend until smooth.
  • 7 check for taste and add more onion, garlic, salt, pepper, vinegar or oil as necessary. (if adding more onion or garlic, cut to a fine mince before adding to the blender.).
