- 2 make the biga by stirring together the yeast, flour, and water. the dough will be very stiff and dry. place it in a lightly greased bowl, cover it, and let it rest at room temperature overnight.

- 2 tablespoons fresh rosemary, chopped
- 2 3/4 cups all-purpose flour
- 2 teaspoons sugar (for sprinkling on top)

- 1 cream butter & 2/3 c sugar until light & fluffy.
- 2 blend in flour and rosemary.
- 3 form into 3-4 dough cylinders and refrigerate.
- 4 when you're ready to bake a cylinder, remove from refrigerator and slice into1/4" or so slices.
