Dairy-free For "little Me" Pineapple Stuffing

Total Time: 1 hr 15 mins Preparation Time: 15 mins Cook Time: 1 hr

Ingredients

  • Servings: 4
  • 1 (8 ounce) can crushed pineapple, drained
  • 4 eggs, beaten
  • 5 slices bread, cubed
  • 3/4 cup brown sugar
  • 1/2 cup extra virgin olive oil
  • 2 tablespoons extra virgin olive oil
  • 1/4 teaspoon cinnamon
  • cooking spray

Recipe

  • 1 preheat oven to 375 degrees and prep 8" square glass cooking dish by spraying thoroughly with cooking spray.
  • 2 using a fork, beat both measurements of olive oil into the sugar and cinnamon; stir in the crushed pineapple.
  • 3 add the cubed bread, being sure not to over-mix.
  • 4 fill the glass cooking dish with the mixture.
  • 5 cook for 30 minutes or until the top look browned.
  • 6 let stuffing in the pan for 5 minutes before serving.

  • 1/8 teaspoon instant yeast
  • 1 cup bread flour
  • 1/3 cup cool water
  • 1 1/4 teaspoons salt
  • 3 tablespoons brown sugar
  • 1/2 cup rye flour
  • 1/2 cup pumpernickel flour
  • 1 cup unbleached all-purpose flour
  • 3/4 cup lukewarm water
  • 2 teaspoons instant yeast
  • 2 tablespoons butter
  • 1/2 cup chopped pecans
  • 1 cup currants or 1 cup raisins

  • 2 make the biga by stirring together the yeast, flour, and water. the dough will be very stiff and dry. place it in a lightly greased bowl, cover it, and let it rest at room temperature overnight.

Ingredients

  • Servings: 5
  • 1/2 lb cream cheese
  • 2 eggs
  • 1/4 cup sugar
  • 1 teaspoon salt
  • 3 cups cooked medium noodles, drained
  • 2 tablespoons dry breadcrumbs
  • 3 tablespoons melted butter

Recipe

  • 1 cream the cheese with the eggs, sugar and salt.
  • 2 stir in the noodles.
  • 3 turn into a buttered 8 inch ring mold.
  • 4 sprinkle with the bread crumbs and butter.
  • 5 bake at 375 degrees for 40 minutes or until browned.
  • 6 unmold carefully.

Low Cal Breakfast Sandwich

  • 1/4 cup egg
  • 1 slice turkey bacon (butterball everday)
  • 1 slice fat-free american cheese (borden)
  • 2 slices natures own whole wheat bread (40 cal or slice)
  • tabasco sauce or favorite hot sauce

  • 1 cook egg in non stick pan with cooking spray.
  • 2 microwave bacon for 60 seconds.
  • 3 toast bread in toaster.
  • 4 assemble as a sandwich- good for make ahead (night before)- to warm in m-wave for 25 seconds at full power.

Simple Rosemary Shortbread

Ingredients

  • 1 1/2 cups salted butter
  • 2/3 cup sugar
  • 2 tablespoons fresh rosemary, chopped
  • 2 3/4 cups all-purpose flour
  • 2 teaspoons sugar (for sprinkling on top)

Recipe

  • 1 cream butter & 2/3 c sugar until light & fluffy.
  • 2 blend in flour and rosemary.
  • 3 form into 3-4 dough cylinders and refrigerate.
  • 4 when you're ready to bake a cylinder, remove from refrigerator and slice into1/4" or so slices.
  • 5 bake at 375 degrees for 9 minutes.
