Potato Olive Bread

Total Time: 1 hr Preparation Time: 15 mins Cook Time: 45 mins

Ingredients

  • 3/4 cup whole wheat flour
  • 3/4 cup whole wheat flour
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/4 cup freshly grated parmesan cheese
  • 1/4 cup chopped kalamata olives or 1/4 cup green olives
  • 1 large garlic clove, minced
  • 1 cup mashed potatoes (1 large potato)
  • 1 large egg, beaten
  • 1/4 cup beer or 1/4 cup ale or 1/4 cup water

Recipe

  • 1 preheat oven to 375 degrees.
  • 2 combine flours, baking powder, and salt, mixing well.
  • 3 stir in cheese, olives, and garlic.
  • 4 combine potatoes and egg, then stir into the flour mixture.
  • 5 add the beer or ale or water all at once and stir well for 30 seconds.
  • 6 turn the dough out onto a floured surface and knead gently for 30 seconds.
  • 7 form into a 5-inch round loaf and slash an 'x' across the top, dividing the loaf into four equal sections.
  • 8 transfer the loaf to a baking sheet and bake 45 minutes or until golden brown.
  • 9 cool on a wire rack.

Mandarin Orange Bread

Total Time: 21 mins Preparation Time: 20 mins Cook Time: 1 min

Ingredients

  • 4 eggs
  • 1 1/2 cups sugar
  • 2 1/2 cups flour
  • 2 teaspoons salt
  • 2 teaspoons baking soda
  • 1 1/2 cups quick-cooking oats
  • 2 (11 ounce) cans mandarin oranges, undrained
  • 1 (3 ounce) package orange gelatin
  • 1 cup nuts, chopped

Recipe

  • 1 in a large bowl combine the eggs and sugar.
  • 2 beat until light and fluffy,about 2 minutes.
  • 3 in a small bowl sift together the flour, salt,and baking soda.
  • 4 add the flour mixture to the egg mixture and stir until smooth.
  • 5 add the remaining ingredients and mix well.
  • 6 spoon into greased and floured 9 x 5-inch loaf pans.
  • 7 bake at 325-degrees for 1 hour.
  • 8 remove from pans immediately.
  • 9 let stand for 24 hours before slicing.
  • 10 makes 2 loaves.

Ham Roll-ups

Total Time: 50 mins Preparation Time: 30 mins Cook Time: 20 mins

Ingredients

  • Servings: 4
  • 2 medium sweet potatoes or 2 medium yams
  • 3 tablespoons butter, melted
  • 1/2 cup crushed pineapple, reserve juice
  • 1/4 cup pecans, chopped
  • 1/2 cup cracker crumbs or 1/2 cup breadcrumbs
  • 3 tablespoons brown sugar
  • 2 lbs ham slices, sliced 1/4-inch thick (2 slices of either smoked or boiled ham)
  • 3/4 cup pineapple juice

Recipe

  • 1 cook sweet potatoes in boiling salted water until tender.
  • 2 drain and mash.
  • 3 add butter, pineapple, nuts, crumbs and brown sugar; mix well.
  • 4 preheat oven to 350°f.
  • 5 spread a thick layer of filling on each ham slice; roll as for a jelly roll, fasten with toothpicks or tie into shape.
  • 6 place in a baking dish, pour pineapple juice over and bake (1 hour for smoked ham and 20 minutes for boiled ham).
  • 7 baste frequently with pan juices.
  • 8 cut each roll into thirds.

Graham Cracker Christmas Tree Decoration

Ingredients

  • 12 graham crackers (about 1 sleeve)
  • 1 (6 1/2 ounce) can wilton's ready-to-decorate frosting
  • 20 candies, for decorating

Recipe

  • 1 take 3 graham cracker sheets (rectangle) and break into squares. place one square for your base and top with a squirt of frosting. add another square on top. repeat 5-6 times for your tree trunk base. now squirt an x on the top square layer. with your remaining graham sheets, first break into squares, then cut on the diagonal to make several triangles. it is easier to cut with a serrated knife. take two triangles and place them on your trunk base in the frosting x. repeat with two more triangles. use more frosting to line your sides for extra strength (like you would for a gingerbread house). i used 8 triangles total. line each edge with frosting. decorate before the frosting sets. a quick and easy thing for kids to make - and eat!

Pecan-lentil Burgers

Ingredients

  • Servings: 4
  • 1 1/2 cups cooked brown lentils
  • 1/2 cup ground pecans
  • 1/2 cup old fashioned oats
  • 1/4 cup dry breadcrumbs
  • 1/4 cup wheat gluten flour (vital wheat gluten)
  • 1/2 cup minced onion
  • 1/4 cup minced fresh parsley
  • 1 teaspoon dijon mustard
  • 1/2 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • 2 tablespoons olive oil
  • 4 -6 hamburger buns
  • lettuce leaf
  • sliced tomato
  • sliced red onion

Recipe

  • 1 in a food processor, combine the lentils, pecans, oats, bread crumbs, flour, onion, parsley, mustard, salt, and pepper; pulse to combine, leaving some texture; taste and adjust seasonings.
  • 2 shape the mixture into 4-6 burgers.
  • 3 in a big skillet, heat oil over medium heat; add the burgers and cook until golden brown, about 5 minutes per side.
  • 4 serve the burgers on the buns with lettuce, tomato slices, onion, and condiments of choice.

Heirloom Tomato Pie

Ingredients

  • Servings: 6
  • 2 1/2 lbs heirloom tomatoes, sliced 1/4 inch thick
  • 1/2 teaspoon salt
  • 1 refrigerated pie crust
  • 1/4 cup plain breadcrumbs
  • 8 ounces mozzarella cheese, fresh, sliced 1/8 inch thick
  • 1/2 cup fresh basil leaf
  • 1/4 cup parmesan cheese, shredded
  • fresh cracked pepper
  • 1 egg, beaten (optional)

Recipe

  • 1 heat oven to 375. placed sliced tomatoes in a single layer on paper towels. sprinkle one side with 1/4 tsp of the salt; let stand for 10 minutes. gently pat salted side of tomatoes with paper towels to absorb some of the moisture. flip tomatoes and sprinkle with remaining 1/4 tsp salt.
  • 2 meanwhile, fit piecrust into a 9-inch pie plate. sprinkle bread crumbs evenly on the bottom. place half the mozzarella over the bread crumbs, along with a third of the tomatoes and a third of the basil. sprinkle with 2 tbsp of the parmesan. layer with a third of the tomatoes, a third of the basil and remaining mozzarella. layer with remaining tomatoes, basil and parmesan. season with pepper and if desired, brush edges of crust with beaten egg.
  • 3 bake at 375 for 40 to 45 minutes, until crust is browned. cool 10 to 15 minutes before slicing.
  • 4 note: pie will have moisture. for a less wet pie, seed the tomatoes.

Mandarin Orange French Toast Bake

Total Time: 45 mins Preparation Time: 20 mins Cook Time: 25 mins

Ingredients

  • Servings: 8
  • 1/2 cup all-purpose flour
  • 1 1/2 cups milk
  • 1 tablespoon granulated sugar
  • 1 teaspoon grated orange peel
  • 1/2 teaspoon vanilla
  • 1/4 teaspoon salt
  • 6 eggs
  • 10 slices french bread, cut into 1-inch cubes (9 cups)
  • 1 (11 ounce) can mandarin orange segments, drained
  • powdered sugar, if desired
  • 1 (12 ounce) jar orange marmalade, heated

Recipe

  • 1 spray 13x9x2-inch glass baking dish with cooking spray. in a large bowl, beat first seven (7) ingredients together until smooth. stir in bread cubes until coated.
  • 2 pour bread mixture into casserole. top evenly with orange segments. cover. refrigerated at least 8 hours but no longer that 24.
  • 3 heat oven to 400°. uncover bread mixture and bake 20-25 minutes or until golden brown. sprinkle with powdered sugar, if desired, and serve with orange marmalade.
